Sch\u00f6n Fleisch &#8211;  sch\u00f6n scharf.<\/p>\n\n\n\n<p><a><strong><u>Beef Szechuan<\/u><\/strong><\/a><\/p>\n\n\n\n<p>China (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>700g Rindfleisch (je nach Budget: normales Geschnetzeltes, \u00e0 la Minute oder Huft), in kleine eher l\u00e4ngliche St\u00fccke schneiden lassen.<\/li>\n\n\n\n<li>1&#8230;2 Bund Lauchzwiebeln (Fr\u00fchlingszwiebeln)<\/li>\n\n\n\n<li>1 Knoblauchzehe<\/li>\n\n\n\n<li>Sesam\u00f6l<\/li>\n\n\n\n<li>Maizena<\/li>\n\n\n\n<li>Sherry<\/li>\n\n\n\n<li>Sojasauce<\/li>\n\n\n\n<li>2 Peperoncini<\/li>\n\n\n\n<li>1 Essl\u00f6ffel schwarzer Pfeffer (ganze K\u00f6rner)<\/li>\n\n\n\n<li>Frischer Koriander<\/li>\n\n\n\n<li>600&#8230;700g chinesische Nudeln (schmale)<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Das Fleisch mindestens 30 Minuten marinieren in einer Marinade aus:\n<ul class=\"wp-block-list\">\n<li>2 Teel\u00f6ffel Sherry<\/li>\n\n\n\n<li>1 Essl\u00f6ffel Sojasauce<\/li>\n\n\n\n<li>1 Essl\u00f6ffel Maizena<\/li>\n\n\n\n<li>4 Essl\u00f6ffel Wasser<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n\n\n\n<p>In einer Sch\u00fcssel das Fleisch mit der Marinade von Hand gut einmassieren.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 Essl\u00f6ffel schwarze Pfefferk\u00f6rner in einer trockenen Pfanne bei grosser Hitze kurz r\u00f6sten (bis sie zu springen und rauchen anfangen)<\/li>\n\n\n\n<li>W\u00fcrzmischung herstellen (\u00e4hnlich wie die Marinade) und in Schale geben:\n<ul class=\"wp-block-list\">\n<li>2 Teel\u00f6ffel Sherry<\/li>\n\n\n\n<li>2 Essl\u00f6ffel Sojasauce<\/li>\n\n\n\n<li>2 Teel\u00f6ffel Zucker<\/li>\n\n\n\n<li>1 Essl\u00f6ffel Maizena<\/li>\n\n\n\n<li>4 Essl\u00f6ffel Wasser<\/li>\n\n\n\n<li>Ger\u00f6stete Pfefferk\u00f6rner<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Lauchzwiebeln in nicht zu kleine St\u00fccke schneiden (inkl. die sch\u00f6nen Teile der gr\u00fcne Stiele)<\/li>\n\n\n\n<li>Peperoncini entkernen und in schmale St\u00fccke schneiden<\/li>\n\n\n\n<li>Knoblauchzehe klein schneiden<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die Marinade vom Fleisch abtropfen lassen.<\/li>\n\n\n\n<li>In der Bratpfanne oder im Wok das Sesam\u00f6l stark erhitzen und das Fleisch ganz kurz anbraten (ca. 3 Minuten, nur bis es \u00e4usserlich nicht mehr roh ist). Dann das Fleisch in einem Teller weglegen.<\/li>\n\n\n\n<li>In der selben Pfanne wieder mit neuem Sesam\u00f6l die Lauchzwiebeln, den Knoblauch und die Peperoncini wenige Minuten d\u00fcnsten (ca. 3 Minuten).<\/li>\n\n\n\n<li>Nacheinander das vorbereitete Fleisch, die W\u00fcrzmischung und etwas frischen Koriander beigeben und gut mischen. In den 80\u00b0C Ofen stellen zum warm halten.<\/li>\n\n\n\n<li>Parallel dazu die Nudeln im Wasser weich kochen (die d\u00fcnnen Nudeln sind schnell weich!). Nach dem abtropfen etwas Sesam\u00f6l untermischen. Nudeln und Szechuan Beef in separaten Schalen servieren.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Das Fleisch heiss servieren. Am besten das fertige Fleisch in den 80\u00b0C Backofen stellen bis die Nudeln auf dem Tisch sind.<\/li>\n\n\n\n<li>Auf die Nudeln kann man individuell etwas Soja-Sauce geben.<\/li>\n\n\n\n<li>Alternativ zu den Nudeln kann weisser Basmati-Reis serviert werden.<\/li>\n\n\n\n<li>Das Gem\u00fcse kann z.B. mit feingeschnittenen Karotten oder Peperoni erg\u00e4nzt werden.<\/li>\n\n\n\n<li>Aus Budgetgr\u00fcnden kann das teure Rindfleisch auch mit geschnittenen Champignons gestreckt werden.
