Anders als indisch oder thail\u00e4ndisch. Relativ trocken und stark kokoslastig.<\/p>\n\n\n\n<p>Malaysia und Indonesien (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>700-800g mageres Rindsgulasch (W\u00fcrfel)<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>1 Knoblauchzehe<\/li>\n\n\n\n<li>min. 250ml Kokosnussmilch<\/li>\n\n\n\n<li>50g geraspelte Kokosnuss (zu finden bei Backzutaten)<\/li>\n\n\n\n<li>3&#8230;4 Zitronengrasstangen<\/li>\n\n\n\n<li>1 geh\u00e4ufter Teel\u00f6ffel Chilipaste (z.B. Sambal Oelek)<\/li>\n\n\n\n<li>1 daumengrosses St\u00fcck frischer Ingwer<\/li>\n\n\n\n<li>1 Teel\u00f6ffel Kreuzk\u00fcmmel<\/li>\n\n\n\n<li>1 Teel\u00f6ffel Korianderpulver<\/li>\n\n\n\n<li>1 Teel\u00f6ffel Zimtpulver<\/li>\n\n\n\n<li>1 Prise Salz<\/li>\n\n\n\n<li>1 Prise Zucker<\/li>\n\n\n\n<li>Sesam\u00f6l<\/li>\n\n\n\n<li>500g Basmati Reis (2&#8230;2\u00bd grosse Tassen)<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Paste zubereiten aus:\n<ul class=\"wp-block-list\">\n<li>1 Essl\u00f6ffel Sesam\u00f6l<\/li>\n\n\n\n<li>kleingehackter Ingwer<\/li>\n\n\n\n<li>Chilipaste<\/li>\n\n\n\n<li>kleingehackte Zwiebel<\/li>\n\n\n\n<li>kleingehackter Knoblauch<\/li>\n\n\n\n<li>Kreuzk\u00fcmmel, Koriander und Zimt<\/li>\n\n\n\n<li>Salz<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n\n\n\n<p>Alles in einer kleinen Schale mit einem L\u00f6ffel gut vermischen und zu einer Paste zerstampfen \u2013 noch besser im M\u00f6rser.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die geraspelte Kokosnuss in der Bratpfanne leicht goldbraun r\u00f6sten (ohne \u00d6l). Achtung: das geht sehr schnell &#8211; nicht verbrennen!<\/li>\n\n\n\n<li>Bei den Zitronengrasstangen die \u00e4usserste Schicht entfernen und die Enden wegschneiden. L\u00e4ngs halbieren und mit einem L\u00f6ffel flachdr\u00fccken.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>In einer grossen Bratpfanne die Paste kurz anbraten bis es gut riecht.<\/li>\n\n\n\n<li>Die Fleischw\u00fcrfel zugeben und rundum knapp 10 Minuten anbraten.<\/li>\n\n\n\n<li>Die Kokosmilch beigeben und 15 Minuten k\u00f6cheln lassen.<\/li>\n\n\n\n<li>Die Zitronengrasstangen, die ger\u00f6stete Kokosnuss und etwas Zucker unterr\u00fchren.<\/li>\n\n\n\n<li>Min. 1\u00bd&nbsp; Stunde k\u00f6cheln lassen (mit Deckel drauf) und immer wieder r\u00fchren. Dazwischen mehrmals etwas Wasser beigeben. Die Sauce soll am Ende aber komplett eingedickt sein. Deshalb gegen Schluss den Deckel \u00f6ffnen, damit die Sauce eindickt.<\/li>\n\n\n\n<li>Parallel dazu weissen asiatischen Klebreis kochen (z.B. Basmati)<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die Zitronengrasstangen werden nicht gegessen. Sie zerfallen und k\u00f6nnen vor dem Servieren entfernt werden.<\/li>\n\n\n\n<li>Anstelle von Rind kann man auch Lamm nehmen.<\/li>\n\n\n\n<li>Das spezielle am Rendang ist, dass die Sauce am Schluss wenig Fl\u00fcssigkeit hat. Die dicke Sauce soll im Prinzip nur an den Fleischst\u00fccken haften.<\/li>\n\n\n\n<li>Die malaysischen Rezepte sprechen von 3&#8230;4 Stunden Kochzeit. Bei gutem Rindfleisch gen\u00fcgen jedoch meines Erachtens 1\u00bd Stunden Kochzeit.<\/li>\n\n\n\n<li>Als Beilage kann man beliebiges Gem\u00fcse in wenig \u00d6l d\u00fcnsten. Leicht salzen und pfeffern und ggf. wenig 5-Gew\u00fcrz beigeben f\u00fcr den asiatischen Touch.<\/li>\n<\/ul>\n\n\n\n<div style=\"height:31px\" aria-hidden=\"true\"
