Ein sehr einfaches Reisgericht mit etwas Gem\u00fcse. Aber soviel ich mich erinnere, war das immer ziemlich oder ganz trocken. Wie man unten sieht, ist ein richtiges venezianisches Risi-Bisi aber fast suppenartig fl\u00fcssig. Hat allen sehr gut geschmeckt. Ich hab&#8217;s ziemlich stark gew\u00fcrzt mit Salz und Pfeffer, sonst kann es dann fad wirken.<\/td><\/tr><\/tbody><\/table><\/figure>\n\n\n\n<p>(f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>400g Risotto Reis (Carnaroli)<\/li>\n\n\n\n<li>300g tiefgek\u00fchlte gr\u00fcne Erbsen<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>1 Knoblauchzehe<\/li>\n\n\n\n<li>\u00bd Bund frische Petersilie<\/li>\n\n\n\n<li>1 W\u00fcrfel Gem\u00fcsebouillon<\/li>\n\n\n\n<li>1dl Weisswein<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>ein sch\u00f6nes St\u00fcck Butter<\/li>\n\n\n\n<li>150g geriebener Parmesan<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Zwiebel und Knoblauch klein hacken.<\/li>\n\n\n\n<li>Petersilie klein hacken<\/li>\n\n\n\n<li>ca. 1l Gem\u00fcsebr\u00fche mischen aus warmem Wasser und dem Gem\u00fcsebouillonw\u00fcrfel<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>In einer hohen Pfanne Oliven\u00f6l erhitzen und die Zwiebeln und Knoblauch darin glasig d\u00fcnsten.<\/li>\n\n\n\n<li>Den Risotto Reis zuf\u00fcgen, etwas anbraten und mit Wein abl\u00f6schen. Dann soviel Gem\u00fcsebr\u00fche zugiessen, bis der Reis ganz leicht bedeckt ist. Unter R\u00fchren einmal kurz aufkochen.<\/li>\n\n\n\n<li>Die Temperatur zur\u00fccknehmen und den Reis in 20\u202625 Minuten leicht k\u00f6cheln wie ein Risotto. Dabei immer wieder sehr gut umr\u00fchren, damit nichts anbrennt, und nach und nach Bouillon zugeben. Die Konsistenz vom Risi-Bisi sollte wie eine dickliche Reissuppe sein, also fl\u00fcssiger als ein Risotto!<\/li>\n\n\n\n<li>Erst gegen Ende der Garzeit die gefrorenen Erbsen und die Petersilie zugeben und das Risi-Bisi reichlich mit Pfeffer und Salz w\u00fcrzen.<\/li>\n\n\n\n<li>Butter und geriebenen Parmesan unterr\u00fchren und ggf. noch etwas Bouillon zugeben, bis die relativ fl\u00fcssige Konsistenz erreicht ist.
