In den n\u00e4chsten 5 Jahren muss ich da mal vorbeischauen. Es ist ziemlich mastig. Und herrlich unkonventionell. Irgendwie kommt es mir auch etwas &#8222;altmodisch&#8220; vor. Aber sehr global. Fusion. Asien, Europa und eben vor allem indigen, d.h. Tradition der Urbev\u00f6lkerung. Meerschweinchen (cuy) zu grillen, hab ich mich noch nicht getraut. Als Bub hatte ich ein solches, das Dank meiner F\u00fctterung uralt geworden ist \ud83d\ude42<\/p>\n\n\n\n<p><strong>Causa lime\u00f1a de at\u00fan<\/strong><\/p>\n\n\n\n<p>Peru (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1kg\nmehlig kochende Kartoffeln<\/li>\n\n\n\n<li>ca.\n200g B\u00fcchsen-Thunfisch nature<\/li>\n\n\n\n<li>3\ngelbe Chilis oder Peperoncini<\/li>\n\n\n\n<li>\u00bd\ngelbe Peperoni<\/li>\n\n\n\n<li>ein\nTeil einer kleinen Zwiebel<\/li>\n\n\n\n<li>1\nAvocado<\/li>\n\n\n\n<li>1\u20262\nLimetten<\/li>\n\n\n\n<li>Zitronensaft<\/li>\n\n\n\n<li>2\nCherrytomaten (zur Deko)<\/li>\n\n\n\n<li>2\nschwarze Oliven (zur Deko)<\/li>\n\n\n\n<li>1\ngekochtes Ei (zur Deko)<\/li>\n\n\n\n<li>4\nEssl\u00f6ffel Mayonnaise (ca. 60g)<\/li>\n\n\n\n<li>\u00d6l<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>1\nPrise Zucker<\/li>\n\n\n\n<li>1\nKochring (Metallform ca. \u00d8 100\nx 45mm)<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die\ngelbe Aji Amarillo Paste herstellen (mangels Amarillo Chilis nehmen wir gelbe\nPeperoncinis oder \u00e4hnliche Chilischoten und strecken mit etwas gelber Peperoni):\n<ul class=\"wp-block-list\">\n<li>Die\nChilis l\u00e4ngs halbieren und die sehr scharfen Kerne entfernen. Ebenso die\nPeperoni r\u00fcsten und in St\u00fccke schneiden.<\/li>\n\n\n\n<li>Alles\nin wenig Wasser ca. 15 Minuten stark kochen bis sie weich sind. Abtropfen.<\/li>\n\n\n\n<li>Mit\ndem Stabmixer mit etwas \u00d6l, einer Prise Zucker und einem Schuss Zitronensaft zu\neiner s\u00e4migen Paste mixen. Mit Salz und Pfeffer abschmecken.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Dann\nder Kartoffelstock:\n<ul class=\"wp-block-list\">\n<li>Kartoffeln\nje nach Gr\u00f6sse 25\u202640 Minuten weich kochen, abk\u00fchlen, sch\u00e4len und stampfen.<\/li>\n\n\n\n<li>In\neine grosse Schale geben und die Aji Amarillo Sauce, die ausgepressten\nLimetten, Salz und Pfeffer mit einem Essl\u00f6ffel sehr gut unterr\u00fchren. Der Stock\nsoll etwas scharf sein von den Chilis. Ansonsten mit Chilipulver etwas\nnachsch\u00e4rfen.<\/li>\n\n\n\n<li>Beiseite\nstellen und abk\u00fchlen lassen.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Die\nThunfischpaste:\n<ul class=\"wp-block-list\">\n<li>Wenig\nZwiebel klein hacken.<\/li>\n\n\n\n<li>Den\nThunfisch gut abtropfen und mit der Mayonnaise und Zwiebel mit einem Essl\u00f6ffel gut\nvermanschen.<\/li>\n\n\n\n<li>Mit\nSalz und Pfeffer abschmecken.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Avocado\nsch\u00e4len und in Scheiben schneiden. Mit Zitronensaft mischen, damit sie nicht\nbraun werden.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Jetzt\nwerden die Causas im Kochring schichtf\u00f6rmig wie T\u00f6rtchen &#8222;gebaut&#8220;. 1\nPro Person, wenn es eine Vorspeise ist oder sonst auch mehr.<\/li>\n\n\n\n<li>Zuunterst\neine Lage gelber Kartoffelp\u00fcree. Dann Thunfisch. Dann Avocadoscheiben. Und zuoberst\nwieder eine Lage Kartoffel.<\/li>\n\n\n\n<li>Obenauf\nnach Belieben dekorieren z.B. mit Cherrytomaten, gekochten Eiern, schwarzen\nOliven etc.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Causas\nwerden typischerweise als Vorspeise kalt gegessen.<\/li>\n\n\n\n<li>Man\nkann auch andere Schichten kreieren. Insbesondere solche mit noch anderen\nFarben. Z.B. mit Huhn oder Gem\u00fcse.<\/li>\n\n\n\n<li>Der\nAusdruck Causa&nbsp; (&#8222;Kausay&#8220;)\nkommt angeblich aus der indigenen Sprache Quenchua und heisst soviel wie Doch f\u00fcr einen richtigen Abend braucht es noch eine kleine Hauptspeise.<\/td><\/tr><\/tbody><\/table><\/figure>\n\n\n\n<div style=\"height:47px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Anticuchos\nde pollo<\/strong><\/p>\n\n\n\n<p>Peru (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>600g\nH\u00fchnerbrust<\/li>\n\n\n\n<li>Maisk\u00f6rner\naus der Dose (ca. 500g)<\/li>\n\n\n\n<li>2\nKnoblauchzehen<\/li>\n\n\n\n<li>1\nTeel\u00f6ffel Kreuzk\u00fcmmel<\/li>\n\n\n\n<li>1\nTeel\u00f6ffel scharfes Paprikapulver<\/li>\n\n\n\n<li>1\nhandvoll frischer Oregano<\/li>\n\n\n\n<li>3\nEssl\u00f6ffel Sojasauce<\/li>\n\n\n\n<li>1\nSchuss Essig<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>4\nEssl\u00f6ffel \u00d6l<\/li>\n\n\n\n<li>Holz-,\nBambus- oder Metallspiesschen<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Das\nHuhn in nicht zu kleine W\u00fcrfel schneiden<\/li>\n\n\n\n<li>Die\nMarinade herstellen aus:\n<ul class=\"wp-block-list\">\n<li>gepresste\nKnoblauchzehen<\/li>\n\n\n\n<li>Kreuzk\u00fcmmel<\/li>\n\n\n\n<li>scharfes\nPaprikapulver<\/li>\n\n\n\n<li>Sojasauce<\/li>\n\n\n\n<li>Essig<\/li>\n\n\n\n<li>Salz,\nPfeffer<\/li>\n\n\n\n<li>kleingeschnittener\nOregano<\/li>\n\n\n\n<li>\u00d6l<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Die\nH\u00fchnerw\u00fcrfel in einer grossen Schale mit der Marinade einreiben und beliebige\nZeit im K\u00fchlschrank marinieren. Vor dem grillen auf die Spiesschen stecken.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Den\nMais gut abtropfen und in etwas \u00d6l anbraten. Warm stellen.<\/li>\n\n\n\n<li>Die\nFleischspiesschen auf dem Gasgrill allseitig gut anbraten (total ca. 12\nMinuten).<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Anticucho\nSpiesse werden traditionell mit Rinderherz zubereitet.
