Ganz im Sinne von <em>from nose to tail<\/em>.<\/p>\n\n\n\n<p><strong>Chili con Carne<\/strong><\/p>\n\n\n\n<p>Mexico, Texas (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>800g\nRindfleisch (Voresssen, Gulasch oder auch mageres Siedfleisch)<\/li>\n\n\n\n<li>2\nDosen rote Kidney (Indianer) Bohnen (total ca. 500g netto)<\/li>\n\n\n\n<li>1 Dose Mais (ca.\n300g netto)<\/li>\n\n\n\n<li>1\nZwiebel<\/li>\n\n\n\n<li>1\nKnoblauchzehe<\/li>\n\n\n\n<li>2\nPeperoncinis<\/li>\n\n\n\n<li>1\ngrosse Dose gehackte Tomaten (800g)<\/li>\n\n\n\n<li>1\nPrise Kreuzk\u00fcmmel<\/li>\n\n\n\n<li>Chiliflocken<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>1\ngrosser Schuss Rotwein<\/li>\n\n\n\n<li>1\nEssl\u00f6ffel Tomatenmark aus der Tube<\/li>\n\n\n\n<li>30g\ndunkle Schokolade (z.B. mit 90% Kakao)<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>Paprikapulver<\/li>\n\n\n\n<li>eine\ngrosse Hand voll frischer Oregano<\/li>\n\n\n\n<li>1\nSchuss Kochrahm<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die\nGulaschw\u00fcrfel selber oder vom Metzger mindestens vierteln lassen. Sie sollen viel\nkleiner sein als Gulaschw\u00fcrfel!<\/li>\n\n\n\n<li>Peperoncini,\nZwiebel und Knoblauch klein schneiden. Einen Teil der Peperoncini Kerne\nentfernen je nach Sch\u00e4rfewunsch.<\/li>\n\n\n\n<li>Bohnen\nund Mais sehr gut waschen und abtropfen.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Das\nFleisch in einem hohen Br\u00e4ter oder Gusspfanne mit Oliven\u00f6l gut und heiss\nanbraten.<\/li>\n\n\n\n<li>Zwiebeln,\nKnoblauch, Paprikapulver und Kreuzk\u00fcmmel beigeben und and\u00fcnsten. <\/li>\n\n\n\n<li>Peperoncinis\nbeigeben und mitd\u00fcnsten und dann etwas Tomatenmark unterr\u00fchren. Nichts\nanbrennen lassen!<\/li>\n\n\n\n<li>1\ngrosser Schuss Rotwein beigeben und dann die gehackten Tomaten. Salzen,\npfeffern und Chili beigeben je nach Sch\u00e4rfewunsch. Ebenso die Schokolade\nunterr\u00fchren, die dann eine dunkle Farbe abgibt.<\/li>\n\n\n\n<li>Mindestens\n1\u00bd Stunde zugedeckt simmern (nicht kochen, sondern ganz knapp unter dem\nSiedepunkt halten!). Ggf. wenig Wasser beigeben.<\/li>\n\n\n\n<li>Die\nBohnen und den Mais beigeben und weitere 10 Minuten leicht k\u00f6cheln. Ggf. etwas Wasser\nbeigeben. Am Ende soll das Chili aber eine dickfl\u00fcssige, breiige Konsistenz\nhaben.<\/li>\n\n\n\n<li>5\nMinuten vor dem Ende Oregano und 1 Schuss Kochrahm untermischen.<\/li>\n\n\n\n<li>Ggf.\nnoch mit Salz abschmecken.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Mit\nBaguette Brot servieren oder mit Fertig-Tortillafladen aus dem Mikrowellenofen.<\/li>\n\n\n\n<li>Das\nChili con carne l\u00e4sst sich sehr gut vorg\u00e4ngig kochen. Es schmeckt aufgew\u00e4rmt\nnoch besser.<\/li>\n\n\n\n<li>Die\nAmerikaner nehmen statt Tomaten Fleischbr\u00fche. Man kann auch halbe-halbe machen.<\/li>\n\n\n\n<li>Viele\nChili con Carnes werden mit Hackfleisch gemacht.
