Das Essen sah sch\u00f6n und farbenfroh aus. Es schmeckte aber recht fad. Weil Peru aktuell kulinarisch sehr in ist, befasste ich mich nun ausgiebiger mit der K\u00fcche und kam zum Schluss, dass das original wohl einiges feuriger sein muss. Kartoffeln und Reis auf dem selben Teller &#8211; typisch Peru.<br><\/figcaption><\/figure>\n<\/figure>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Aj\u00ed de gallina<\/strong><\/p>\n\n\n\n<p>Peru\n(f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>ca.\n700g H\u00fchnerbrust<\/li>\n\n\n\n<li>1\ngrosse gelbe Peperoni<\/li>\n\n\n\n<li>2\ngelbe Peperoncini\/Chilis<\/li>\n\n\n\n<li>4\nToast Scheiben<\/li>\n\n\n\n<li>600g\nmittelgrosse Kartoffeln<\/li>\n\n\n\n<li>200g\nweissen Reis<\/li>\n\n\n\n<li>50g\ngeriebener Parmesan<\/li>\n\n\n\n<li>1\nkleine weisse Zwiebel<\/li>\n\n\n\n<li>1\nKnoblauchzehe<\/li>\n\n\n\n<li>40g\nN\u00fcsse (Pekan- oder Baumn\u00fcsse)<\/li>\n\n\n\n<li>getrocknete\nLorbeerbl\u00e4tter<\/li>\n\n\n\n<li>2dl\nKondensmilch (fl\u00fcssig in der Dose und zuckerfrei)<\/li>\n\n\n\n<li>1\nH\u00fchnerbouillon W\u00fcrfel<\/li>\n\n\n\n<li>2\nhartgekochte Eier<\/li>\n\n\n\n<li>Kurkumapulver,\nKreuzk\u00fcmmel<\/li>\n\n\n\n<li>8\nschwarze entsteinte Oliven<\/li>\n\n\n\n<li>Salz,\nPfeffer, Oliven\u00f6l, frische Petersilie<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>In\neinem Topf \u00bd l Wasser zum kochen bringen. Lorbeerbl\u00e4tter beigeben und Bouillonw\u00fcrfel\naufl\u00f6sen und das Huhn k\u00f6cheln bis es weich ist (ca. 25 Min.). Dann herausnehmen\nund abk\u00fchlen lassen. Den Bouillon behalten.<\/li>\n\n\n\n<li>Das\nH\u00fchnerfleisch mit Hand und Gabel in kleine St\u00fccke zerzetteln und im 80\u00b0C Ofen\nwarm stellen.<\/li>\n\n\n\n<li>Zwiebel\nund Knoblauch klein schneiden.<\/li>\n\n\n\n<li>Die\ngekochten Eier sch\u00e4len und halbieren.<\/li>\n\n\n\n<li>Die\nN\u00fcsse von Hand zerkleinern.<\/li>\n\n\n\n<li>Gelbe\nPeperoni und Peperoncini entkernen und in St\u00fccke schneiden. Bei den Peperoncini\nje nach Sch\u00e4rfewunsch einige Kerne drin lassen.<\/li>\n\n\n\n<li>Die\nToastscheiben in der Kondensmilch aufweichen.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>In\nder Bratpfanne mit Oliven\u00f6l die Zwiebeln, Knoblauch, Peperoni und Peperoncini sachte\nand\u00fcnsten. Auf keinen Fall braun werden lassen (wegen der gelben Farbe!).<\/li>\n\n\n\n<li>Dann\ndas dazugeben:\n<ul class=\"wp-block-list\">\n<li>die\neingeweichten Toastscheiben in Kondensmilch<\/li>\n\n\n\n<li>Parmesank\u00e4se<\/li>\n\n\n\n<li>Eine\nPrise Kreuzk\u00fcmmel<\/li>\n\n\n\n<li>Kurkuma\n(f\u00fcr noch mehr gelbe Farbe)<\/li>\n\n\n\n<li>N\u00fcsse<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Gut\nmischen und noch etwas k\u00f6cheln. Es soll relativ dick werden, damit man sp\u00e4ter\nmit Bouillon noch verd\u00fcnnen und Geschmack reinbringen kann. <\/li>\n\n\n\n<li>In\nein hohes Gef\u00e4ss geben und mit dem Stabmixer gut mixen. Ggf. mit Kondensmilch\netwas verd\u00fcnnen.<\/li>\n\n\n\n<li>Dann\nzur\u00fcck in die Bratpfanne und die Sauce mit dem H\u00fchnerfleisch gut verr\u00fchren. Zugleich\netwas vom H\u00fchnerbouillon zugeben. Die Sauce soll am Schluss s\u00e4mig sein, nicht\nzu dick und nicht zu d\u00fcnn. Nochmals kurz aufkochen. Mit Salz und Pfeffer\nabschmecken. Sie soll mittelscharf sein. Warm stellen.<\/li>\n\n\n\n<li>Daneben\ndie Kartoffeln im Wasser weich kochen (ca. 20 Miunten), abschrecken und h\u00e4uten.\nIn fingerdicke Scheiben schneiden und warm stellen.<\/li>\n\n\n\n<li>Ebenso\nden wenigen Reis k\u00f6rnig weich kochen und warm stellen.<\/li>\n\n\n\n<li>Das\nganze auf den Tellern servieren:\n<ul class=\"wp-block-list\">\n<li>das\nSaucen-H\u00fchnchen<\/li>\n\n\n\n<li>die\nKartoffelscheiben (auch mit etwas gelber Sauce bedecken)<\/li>\n\n\n\n<li>einen\nGupf Reis<\/li>\n\n\n\n<li>die\nOliven als Deko<\/li>\n\n\n\n<li>die\nEierh\u00e4lften<\/li>\n\n\n\n<li>mit\netwas Petersilie dekorieren<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die\nSauce soll wirklich wunderbar grell gelb sein.
