Es ist vom Hinterteil des Rindes und wird bei uns Tafelspitz oder noch profaner Siedfleisch genannt. Als solches wird es bei uns praktisch immer als minderwertig betrachtet und in Eint\u00f6pfen gesotten. Die S\u00fcdamerikaner sehen aber gar nichts minderwertiges daran und grillen es wie Filet oder Entrec\u00f4te. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Genau das machte ich nun auch:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>M\u00f6glichst grosse St\u00fccke kaufen. Mit grobem Salz (Fleur de sel) einreiben.<\/li>\n\n\n\n<li>Auf dem sehr heissen Grill (&gt;200\u00b0C) je Seite 4 Minuten grillen.<\/li>\n\n\n\n<li>Dann ein Thermometer in die Mitte einstecken (z.B. Weber i-Grill mit Handy App \ud83d\ude42 ) und indirekt bei minimaler Hitze w\u00e4rmen bis 54\u00b0C Kerntemperatur erreicht sind.<\/li>\n\n\n\n<li>Indirekt heisst: bei meinem Gasgrill mit 3 Brennern stelle ich nur einen an und den auf Minimum. Das Fleisch wird m\u00f6glichst weit weg von dem Brenner gelegt. Der Deckel nat\u00fcrlich immer geschlossen.<\/li>\n\n\n\n<li>Am Schluss das Fleisch draussen noch ein paar Minuten stehen lassen. Die Temperatur stiegt so noch auf ca. 60\u00b0C. Dann in sch\u00f6ne, ca. 1cm d\u00fcnne Tranchen schneiden. Den Saft ablassen und in einer gut vorgew\u00e4rmten Schale servieren.<\/li>\n\n\n\n<li>Dazu geh\u00f6rt pflichtgem\u00e4ss Cimichurri Sauce (aus dem Supermakt).<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Unglaublich: das Bio Siedfleisch kostete CHF 15 pro Kilo. Entrec\u00f4te etwa bis das f\u00fcnffache!
