Zugegeben: einst zusammengestiefelt aus g\u00e4ngigen Kochb\u00fcchern und deshalb nicht soo innovativ. Aber diese s\u00e4mige und aromatische Sauce zum an sich eher nicht so besonders aromatischen aber daf\u00fcr butterzarten Niedergar-Schweine-Lendchen (so heisst das Filet in Deutschland) passt herrlich.<\/p>\n\n\n\n<p><strong><u>Schweinefilet niedergegart an Portwein-Rahm-Sauce<\/u><\/strong><\/p>\n\n\n\n<p>Schweiz (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>800g Schweinefilet<\/li>\n\n\n\n<li>120g in \u00d6l eingelegte getrocknete Tomaten<\/li>\n\n\n\n<li>1 Knoblauchzehe<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>1.5dl Portwein<\/li>\n\n\n\n<li>1 Bouillonw\u00fcrfel<\/li>\n\n\n\n<li>2dl Kochrahm (z.B. Rama)<\/li>\n\n\n\n<li>ein Schuss Zitronensaft<\/li>\n\n\n\n<li>frischer Schnittlauch<\/li>\n\n\n\n<li>Maizena Express (Instant St\u00e4rke)<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Das Filet mit Salz und Pfeffer einreiben.<\/li>\n\n\n\n<li>Die Tomaten in Steifen schneiden.<\/li>\n\n\n\n<li>Zwiebel und Knoblauch klein schneiden.<\/li>\n\n\n\n<li>Schnittlauch klein schneiden.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Das Filet in der Grillpfanne mit etwas \u00d6l (oder auf dem Grill) 2&#215;3 Minuten scharf anbraten.<\/li>\n\n\n\n<li>Dann in einer Form im Ofen bei 80\u00b0C Umluft (&#8222;feucht&#8220;) niedergaren, bis eine Kerntemperatur von 62\u00b0C erreicht ist. Je nach Gewicht und Dicke des Filets dauert das 45\u2026max. 90 Minuten.<\/li>\n\n\n\n<li>In der Bratpfanne mit etwas \u00d6l Zwiebeln, Knoblauch und Tomaten and\u00fcnsten.<\/li>\n\n\n\n<li>Mit dem Portwein abl\u00f6schen und ca. 2 Minuten einkochen.<\/li>\n\n\n\n<li>Den Bouillon beigeben.(4dl heisses Wasser mit Bouillonw\u00fcrfel). K\u00f6cheln.<\/li>\n\n\n\n<li>Am Schluss den Rahm und einen Schuss Zitronensaft unterr\u00fchren und mit Salz und Pfeffer abschmecken.<\/li>\n\n\n\n<li>Dann schrittweise Maizena Express unterr\u00fchren, bis eine leicht s\u00e4mige Konsistenz erreicht ist.<\/li>\n\n\n\n<li>Ebenso den Schnittlauch zugeben.<\/li>\n\n\n\n<li>Die Sauce warmstellen.<\/li>\n\n\n\n<li>Das Filet in gut fingerdicke Scheiben schneiden, in eine warme Form legen und mit der Sauce begiessen.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>M\u00f6gliche Beilagen:<ul><li>Reis<\/li><\/ul>\n<ul class=\"wp-block-list\">\n<li>Teigwaren (hier Fusilli)<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Ich hab hier die Sauce noch mit ein paar Resten Cherry-Tomaten
