In jeglicher Form. Das hier ist ein eher winterlicher, nahrhafter, heisser Eintopf.<\/p>\n\n\n\n<p><strong><u>Kimchi-Jjigae (Kimchi Eintopf)<\/u><\/strong><\/p>\n\n\n\n<p>Korea (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>500-600g (inkl. Saft) gereifter Kimchi (z.B. im Beutel)<\/li>\n\n\n\n<li>400g Schweinsbrust (roher Speck)<\/li>\n\n\n\n<li>300g Tofu<\/li>\n\n\n\n<li>3 Fr\u00fchlingszwiebeln<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>100g Shiitake Pilze<\/li>\n\n\n\n<li>2 Knoblauchzehen<\/li>\n\n\n\n<li>1 daumenspitze grosses St\u00fcck Ingwer<\/li>\n\n\n\n<li>1 Essl\u00f6ffel Tomatenmark<\/li>\n\n\n\n<li>3 Essl\u00f6ffel Reiswein (Mirin)<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>Sesam\u00f6l<\/li>\n\n\n\n<li>Chiliflocken (je nach Sch\u00e4rfewunsch)<\/li>\n\n\n\n<li>0.5l Fischfond fl\u00fcssig oder Pulver (Original ist es Sardellenbr\u00fche)<\/li>\n\n\n\n<li>Sojasauce<\/li>\n\n\n\n<li>1 geh\u00e4ufter Essl\u00f6ffel Zucker<\/li>\n\n\n\n<li>eine Hand voll Sesamk\u00f6rner<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die Kimchi-Packung \u00f6ffnen und den Saft in eine Schale leeren. Dann den Kimchi-Kohl von Hand weiter auspressen nd den Saft ebenfalls in die Schale geben.<\/li>\n\n\n\n<li>Den ausgepressten Kohl ggf. noch in mundgerechte St\u00fccke schneiden.<\/li>\n\n\n\n<li>Vom Speck ggf. die Rinde ab- und Knochen rausschneiden. In mundgerechte gut 5mm dicke Streifen schneiden.<\/li>\n\n\n\n<li>Mit Reiswein und Pfeffer einreiben und min. 15 Minuten marinieren.<\/li>\n\n\n\n<li>Den Tofu abtropfen und ebenfalls in 1.5cm dicke Scheiben zu ca. 5x5cm schneiden.<\/li>\n\n\n\n<li>Die Fr\u00fchlingszwiebeln waschen, trocknen und den gr\u00f6ssten Teil des Gr\u00fcnen l\u00e4ngs in ca. 3cm lange Streifen schneiden. Einen kleinen Teil aber in d\u00fcnne Scheibchen schneiden zum am Schluss garnieren.<\/li>\n\n\n\n<li>Das Weisse der Fr\u00fchlingszwiebeln in Scheiben schneiden und den Knoblauch und Ingwer kleinschneiden.<\/li>\n\n\n\n<li>Shiitakepilze: Stielenden abschneiden, waschen, trocknen und in 7mm dicke Streifen schneiden.<\/li>\n\n\n\n<li>Ggf. den Pulver-Fischfond kurz mit Wasser aufkochen.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>In einer tiefen, schweren Pfanne wenig \u00d6l erhitzen und das marinierte Fleisch ca. 4 Minuten anbraten.<\/li>\n\n\n\n<li>Das Weisse der Zwiebeln, Ingwer und Knoblauch zugeben und kurz danach den Kimchi.<\/li>\n\n\n\n<li>Ebenso etwas Chiliflocken und Zucker und alles knapp 10 Minuten unter gelegentlichem Umr\u00fchren braten.<\/li>\n\n\n\n<li>Die Fr\u00fchlingszwiebel-Streifen, Tomatenmark, das Kimchiwasser und so viel Fischfond zugeben, dass alles knapp mit Fl\u00fcssigkeit bedeckt ist. 20 Minuten k\u00f6cheln.<\/li>\n\n\n\n<li>Mit wenig Sojasauce abschmecken. Es sollte s\u00fcss-sauer, scharf und herzhaft (umami) schmecken.<\/li>\n\n\n\n<li>Die Tofu-Scheiben und die Pilze sch\u00f6n dekorativ obenauf legen, etwas Fl\u00fcssigkeit und wenig Sesam\u00f6l dar\u00fcber giessen und weiter zugedeckt k\u00f6cheln, bis alles heiss ist (ca. 5 Minuten).<\/li>\n\n\n\n<li>Am Schluss die restlichen rohen Fr\u00fchlingszwiebeln und etwas Sesamk\u00f6rner dar\u00fcber streuen.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Ganz heiss in Schalen oder Suppentellern servieren.<\/li>\n\n\n\n<li>Zusammen mit wenig weissem Reis.<\/li>\n\n\n\n<li>Auch gut in einem Le Creuset Profitopf zu kochen.<\/li>\n\n\n\n<li>Je nach Fl\u00fcssigkeitsmenge kann man damit einen Eintopf oder eine Suppe darstellen.<\/li>\n\n\n\n<li>Eines
