So lange hat&#8217;s gebraucht, bis ich das nun mal recherchierte und das Rezept erstellte. Ich bin perplex: es ist in der Tat extrem schmackhaft. Man wird s\u00fcchtig!<\/p>\n\n\n\n<p><strong><u>Mac &amp; Cheese<\/u><\/strong><\/p>\n\n\n\n<p>USA (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>500g&nbsp;Makkaroni-Teigwaren<\/li>\n\n\n\n<li>60g&nbsp;Butter<\/li>\n\n\n\n<li>40g&nbsp;Mehl<\/li>\n\n\n\n<li>750ml&nbsp;Milch<\/li>\n\n\n\n<li>350g&nbsp;kr\u00e4ftiger Cheddark\u00e4se (&#8222;mature&#8220; oder &#8222;extra mature&#8220;)<\/li>\n\n\n\n<li>Chilipulver oder -flocken<\/li>\n\n\n\n<li>1 Knoblauchzehe<\/li>\n\n\n\n<li>Muskatpulver<\/li>\n\n\n\n<li>Salz<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Den Cheddark\u00e4se grob raffeln.<\/li>\n\n\n\n<li>Knoblauchzehe zum Auspressen vorbereiten.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die Makkaroni im Salzwasser nur knapp al dente kochen. Das geht recht schnell.<\/li>\n\n\n\n<li>Sofort mit kaltem Wasser abschrecken und gut abtropfen lassen. In einer grossen Schale beiseitestellen.<\/li>\n\n\n\n<li>Die Butter bei niedriger Hitze in einem Topf zerlassen. Das Mehl hinzugeben und alles mit dem Schneebesen verr\u00fchren, bis eine glatte Masse entsteht und es leicht goldbraun ist (1\u20262 Minuten). Diese Mehlschwitze nennt sich Roux.<\/li>\n\n\n\n<li>Dann langsam warme Milch unterr\u00fchren, so dass keine Klumpen entstehen. Die Sauce unter R\u00fchren etwa 5 Minuten k\u00f6cheln lassen, bis sie cremig ist. Dann den Topf vom Herd nehmen und die H\u00e4lfte des K\u00e4ses untermischen.<\/li>\n\n\n\n<li>Mit dem Schwingbesen r\u00fchren, bis der K\u00e4se geschmolzen ist. Die Sauce mit Chilipulver, Muskat und gepresstem Knoblauch und Salz abschmecken und gut verr\u00fchren.<\/li>\n\n\n\n<li>Die K\u00e4sesauce \u00fcber die Makkaroni leeren und gut vermischen. Dann in eine Auflaufform geben.<\/li>\n\n\n\n<li>Den restlichen K\u00e4se obenauf verteilen und mit wenig Chilipulver bestreuen.<\/li>\n\n\n\n<li>Mac and Cheese im Ofen bei 180\u00b0C ca. 20 Minuten backen, bis die Sauce blubbert und der Cheddar goldbraun und leicht knusprig ist. Am Schluss noch gratinieren mit Oberhitze.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Makkaroni und K\u00e4se ist DER &#8222;Amerikanische K\u00fcchenklassiker&#8220;,
