Verwandt mit dem Wienerschnitzel, aber in Ei-K\u00e4se paniert. Und besser mehrere kleine St\u00fccke. Die Budget-Version mit magerem, d\u00fcnnem Schweinefleisch. Aber mit dem sehr teuren Kalbfleisch ist es einfach um Klassen zarter und besser.<\/p>\n\n\n\n<p><strong><u>Piccata Milanese<\/u><\/strong><\/p>\n\n\n\n<p>Italien (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>550g d\u00fcnne Kalbsschnitzel (140g pro Person, gut auch mehrere kleine St\u00fccke)<\/li>\n\n\n\n<li>4 Eier<\/li>\n\n\n\n<li>150g geriebener Parmesank\u00e4se<\/li>\n\n\n\n<li>100g Weissmehl<\/li>\n\n\n\n<li>reichlich Oliven\u00f6l<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die fertigen Piccata Schnitzel k\u00f6nnen durchaus relativ klein sein, daf\u00fcr mehrere pro Person (z.B. 3). Die Schnitzel also ggf. noch halbieren und etwas flach klopfen.<\/li>\n\n\n\n<li>In einer Sch\u00fcssel die Eier mit Gabel verquirlen und dann gut mit dem Reibk\u00e4se vermischen. Ggf. noch K\u00e4se zugeben. Es soll eine nicht zu dicke Masse werden. Wenn es zu dick wird, mit etwas Milch verd\u00fcnnen.<\/li>\n\n\n\n<li>Mehl in einen Suppenteller geben.<\/li>\n\n\n\n<li>Die Schnitzel mit Salz und Pfeffer w\u00fcrzen.<\/li>\n\n\n\n<li>Im Mehl wenden und etwas abklopfen.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die Schnitzel mit einer Gabel mehrmals durch die Ei-K\u00e4se-Mischung ziehen, etwas abtropfen und in der Bratpfanne in reichlich \u00d6l je Seite ca. 2\u00bd Minuten goldgelb braten.<\/li>\n\n\n\n<li>Auf K\u00fcchenpapier abtropfen.<\/li>\n\n\n\n<li>Im 80\u00b0C Ofen warmstellen bis zum Servieren.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Als Beilage z.B. Tomatenspaghetti oder Safran-Risotto<\/li>\n<\/ul>\n\n\n\n<div style=\"height:46px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images
