Es besteht prim\u00e4r aus Fleischw\u00fcrfeln, Peperoni und viel Zwiebeln zum Binden. Gehackte Tomaten sind optional. Es ist ein Saucen-Fleisch. Original nur mit Brot, \u00fcblicherweise aber mit Reis oder Teigwaren.<\/li>\n\n\n\n<li>Ungarisches Guly\u00e1s, welches ich hier vorstelle, heisst bei uns Gulaschsuppe. Rindfleisch und Gem\u00fcse mit einer Suppen-Konsistenz. Also eine sehr reiche Suppe.<\/li>\n<\/ul>\n\n\n\n<p><strong><u>Ungarisches Guly\u00e1s (Gulaschsuppe)<\/u><\/strong><\/p>\n\n\n\n<p>Ungarn (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>800g Rindsragout, etwas durchzogen (ca. 2.5cm W\u00fcrfel)<\/li>\n\n\n\n<li>300g weisse Zwiebeln (das muss wirklich viel sein!)<\/li>\n\n\n\n<li>3 Knoblauchzehen<\/li>\n\n\n\n<li>400g Kartoffeln<\/li>\n\n\n\n<li>3 Karotten<\/li>\n\n\n\n<li>3 rote Spitz-Peperoni<\/li>\n\n\n\n<li>2 Tomaten<\/li>\n\n\n\n<li>2dl Rotwein<\/li>\n\n\n\n<li>1 \u00fcbervoller Essl\u00f6ffel edels\u00fcsses Paprikapulver<\/li>\n\n\n\n<li>1 Essl\u00f6ffel scharfes Rosen-Paprikapulver (je nach Sch\u00e4rfewunsch)<\/li>\n\n\n\n<li>1 Teel\u00f6ffel K\u00fcmmel<\/li>\n\n\n\n<li>eine grosse Hand voll frischer Majoran oder Oregano<\/li>\n\n\n\n<li>Thymian<\/li>\n\n\n\n<li>2 Essl\u00f6ffel Tomatenmark<\/li>\n\n\n\n<li>ein paar Lorbeerbl\u00e4tter<\/li>\n\n\n\n<li>1 Fleischbouillonw\u00fcrfel<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>\u00d6l<\/li>\n\n\n\n<li>ggf. 1 Schuss Kochrahm (Rama).<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Das Fleisch \u00fcberpr\u00fcfen und ggf. harte Sehnen und Knorpel entfernen.<\/li>\n\n\n\n<li>Zwiebeln in Schnitze und Knoblauch klein schneiden<\/li>\n\n\n\n<li>Kartoffeln und Karotten r\u00fcsten und in 1cm W\u00fcrfel schneiden<\/li>\n\n\n\n<li>Ebenso die Tomaten in W\u00fcrfel schneiden.<\/li>\n\n\n\n<li>Peperoni r\u00fcsten und in mundgerechte St\u00fccke schneiden.<\/li>\n\n\n\n<li>Den K\u00fcmmel im M\u00f6rser zerstossen, oder gemahlenen K\u00fcmmel nehmen.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Das Fleisch in einem (Br\u00e4ter-)Topf in gen\u00fcgend \u00d6l ca. 5 Minuten scharf anbraten.<\/li>\n\n\n\n<li>Zwiebeln und Knoblauch zugeben und ca. 8 Minuten unter R\u00fchren schmoren.<\/li>\n\n\n\n<li>Alles Paprikapulver, K\u00fcmmel, Tomatenmark und Knoblauch unterr\u00fchren und kurz mitd\u00fcnsten. Nicht anbrennen!<\/li>\n\n\n\n<li>Mit Rotwein abl\u00f6schen.<\/li>\n\n\n\n<li>Dann so viel Rinderbr\u00fche (heisses Wasser mit dem Bouillonw\u00fcrfel) zugeben, dass alles gerade bedeckt ist.<\/li>\n\n\n\n<li>Lorbeer dazu geben.<\/li>\n\n\n\n<li>Das Fleisch jetzt lange schmoren, bis es zart ist. Je nach Fleischqualit\u00e4t um 1h oder mehr. Die Zwiebeln zersetzen sich dabei und ergeben die s\u00e4mige Sauce. Ggf. dazwischen Wasser zugeben.<\/li>\n\n\n\n<li>Die Lorbeerbl\u00e4tter kann man jetzt entfernen.<\/li>\n\n\n\n<li>Dann Karotten, Kartoffeln, Tomaten und Peperoni zugeben. Ebenso Wasser, so dass wieder alles knapp bedeckt ist.<\/li>\n\n\n\n<li>K\u00f6cheln, bis das Gem\u00fcse (v.a. die Kartoffeln) gut gar ist (ca. 40 Minuten).<\/li>\n\n\n\n<li>Dazwischen Majoran und Thymian und ggf. nochmals Wasser zugeben. Es soll am Schluss keine Sauce sondern eine s\u00e4mige Suppe sein, die mit dem L\u00f6ffel gegessen wird.<\/li>\n\n\n\n<li>Kurz vor Schluss bei Bedarf mit Salz und Pfeffer oder Chili abschmecken.<\/li>\n\n\n\n<li>Wenn man will, einen Schuss Kochrahm dazu.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Am besten passt frisches Brot dazu.<\/li>\n\n\n\n<li>Guly\u00e1s ist das, was wir bei uns Gulaschsuppe nennen. Das, was wir ungarisches Gulasch nennen, ist in Ungarn ein P\u00f6rk\u00f6lt.<\/li>\n\n\n\n<li>Der Guly\u00e1s war der Rinderhirte.<\/li>\n<\/ul>\n\n\n\n<div style=\"height:51px\" aria-hidden=\"true\"
