Aber ich bin \u00fcber meinen Schatten gesprungen &#8211; wie so oft, wenn ich in neue Sph\u00e4ren will \ud83d\ude42 Was soll ich sagen? Wenn 100% der Menschheit 30 bis 50% weniger Lebewesen fressen w\u00fcrden, ist das effektiver f\u00fcr die CO2-Emissionen, als wenn ein paar Freaks vegan leben. Ich bin ein 100% rationaler Genussmensch und z\u00e4hle mich zu den ersteren.<\/p>\n\n\n\n<p>Die Paella de verduras war gut. Aber der &#8222;go\u00fbt&#8220;, wie meine liebe halbspanische Mutter immer zu sagen pflegte, ist halt nicht der selbe wie mit Kaninchen, Huhn oder Mariscos. Und am besten ist die Abwechslung von beidem.<\/p>\n\n\n\n<p><strong><u>Gem\u00fcse-Paella (vegi)<\/u><\/strong><\/p>\n\n\n\n<p>Spanien (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>450g Carnaroli-Reis (Risotto), 2 grosse Tassen<\/li>\n\n\n\n<li>200g gr\u00fcne Flachbohnen (auch Cocobohnen genannt), z.B. tiefgek\u00fchlt<\/li>\n\n\n\n<li>200g weisse Riesenbohnen gekocht aus der B\u00fcchse (original Garrof\u00f3n Bohnen)<\/li>\n\n\n\n<li>eine Hand voll Tiefk\u00fchl-Erbsen<\/li>\n\n\n\n<li>1 Karotte<\/li>\n\n\n\n<li>4 Artischockenherzen aus dem Glas (ca. 100g)<\/li>\n\n\n\n<li>2 gegrillte und enth\u00e4utete Peperoni aus dem Glas<\/li>\n\n\n\n<li>2 Tomaten<\/li>\n\n\n\n<li>Oliven entsteint, ca. 10 St\u00fcck<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>1 Knoblauchzehe<\/li>\n\n\n\n<li>1 Briefchen Safran<\/li>\n\n\n\n<li>1 W\u00fcrfel Gem\u00fcsebouillon (oder 1 Essl\u00f6ffel Pulver)<\/li>\n\n\n\n<li>1 Teel\u00f6ffel Piment\u00f3n de la Vera (ger\u00e4uchtes Paprika-Pulver)<\/li>\n\n\n\n<li>1 Teel\u00f6ffel Muskatnuss Pulver<\/li>\n\n\n\n<li>Thymian<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>1 Hand voll frische Petersilie<\/li>\n\n\n\n<li>1 Zitrone<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Zwiebel in d\u00fcnne Schnitze und Knoblauch klein schneiden.<\/li>\n\n\n\n<li>Karotte r\u00fcsten und schr\u00e4g in Scheiben schneiden.<\/li>\n\n\n\n<li>B\u00fcchsenpeperoni in mittlere St\u00fccke schneiden.<\/li>\n\n\n\n<li>Die gr\u00fcnen Bohnen ggf. r\u00fcsten und in 3\u20264cm lange St\u00fccke schneiden.<\/li>\n\n\n\n<li>Die Tomaten ein paar Minuten im kochenden Wasser blanchieren, abk\u00fchlen, h\u00e4uten und kleinschneiden.<\/li>\n\n\n\n<li>Petersilie hacken.<\/li>\n\n\n\n<li>Zitrone waschen und in Schnitze schneiden.<\/li>\n\n\n\n<li>Die Paella-W\u00fcrzmischung herstellen:<ul><li>Thymian (frischen mit Schere klein schneiden)<\/li><\/ul><ul><li>Safran, Gem\u00fcsebouillon (W\u00fcrfel oder Pulver), Piment\u00f3n, Muskatpulver<\/li><\/ul>\n<ul class=\"wp-block-list\">\n<li>Salz und Pfeffer (nicht zu viel Salz, wenn man schon genug Bouillon zugegeben hat)<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>In einer grosser Bratpfanne reichlich Oliven\u00f6l erhitzen.<\/li>\n\n\n\n<li>Den Reis zugeben und ca. 2 Minuten anbraten.<\/li>\n\n\n\n<li>Zwiebeln und Knoblauch zugeben und kurz anbraten.<\/li>\n\n\n\n<li>Die doppelte Menge des Reises an Wasser zugeben und die Paella-W\u00fcrzmischung unterr\u00fchren.<\/li>\n\n\n\n<li>Dann nach kurzem Kochen nacheinander die Karotten, gr\u00fcnen Bohnen, Tomaten, Oliven, Peperoni und gegen Schluss die weissen Bohnen, Erbsen und Artischockenherzen unterr\u00fchren. Am Schluss soll alles noch knackig bzw. nicht verkocht sein!<\/li>\n\n\n\n<li>Nicht zu stark r\u00fchren, aber doch so, dass nichts anbrennt. Nachdem das Wasser zugegeben wurde, nur noch mittlere Hitze verwenden; eher langsam kochen.<\/li>\n\n\n\n<li>Ganz am Schluss, wenn der Reis gar ist und er alles Wasser aufgesogen hat, kurz auf volle Hitze erh\u00f6hen und nicht mehr r\u00fchren; die Paella soll zuunterst ganz leicht (aber nur leicht!) anbrennen, was einen guten Geschmack gibt.<\/li>\n\n\n\n<li>Gehackte Petersilie und Zitronenschnitze oben verteilen.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Man kann nat\u00fcrlich auch anderes oder weiteres Gem\u00fcse zugeben wie Broccoli, Blumenkohl, Zucchini, das Gr\u00fcne von Fr\u00fchlingszwiebeln etc. Das Verh\u00e4ltnis von Gem\u00fcse zu Reis soll aber vern\u00fcnftig bleiben.<\/li>\n<\/ul>\n\n\n\n<div style=\"height:43px\"
