August 2016 bebte in Mittelitalien die Erde. In den Marken und Umbrien kamen dabei 283 Menschen ums Leben. Der Ort Amatrice wurde total zerst\u00f6rt. Trotzdem oder gerade deshalb poste ich hier die super bekannte und feine Pastasauce aus Amatrice.<\/p>\n\n\n\n<p><strong><u>Pasta all\u2019amatriciana<\/u><\/strong><\/p>\n\n\n\n<p>Italien (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>500g Teigwaren<\/li>\n\n\n\n<li>200g Speck (z.B. Pancetta)<\/li>\n\n\n\n<li>800g gehackte Tomaten aus der Dose<\/li>\n\n\n\n<li>180g Parmesank\u00e4se am St\u00fcck<\/li>\n\n\n\n<li>1 Peperoncino<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>1\u20262 Knoblauchzehen<\/li>\n\n\n\n<li>1 Handvoll frische Petersilie und\/oder Basilikum<\/li>\n\n\n\n<li>1 Schuss Weisswein<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>1 Prise Zucker<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Den Speck in ca. 2cm lange Streifen schneiden.<\/li>\n\n\n\n<li>Den Peperoncino in Ringe schneiden. Je nach Sch\u00e4rfewunsch einige Kernen entfernen.<\/li>\n\n\n\n<li>Zwiebel und Knoblauch klein schneiden.<\/li>\n\n\n\n<li>Ebenso die Petersilie<\/li>\n\n\n\n<li>1\/3 des K\u00e4ses (60g) reiben f\u00fcr die Sauce.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>In einer Bratpfanne mit wenig Oliven\u00f6l, den Speck ca. 5 Minuten leicht knusprig braten.<\/li>\n\n\n\n<li>Zwiebeln, Knoblauch und Peperoncino zugeben und bei geringerer Hitze weiter braten, bis die Zwiebeln glasig sind (ca. 5 Minuten).<\/li>\n\n\n\n<li>Den Wein beigeben und kurz heiss einkochen (ca. 2 Minuten).<\/li>\n\n\n\n<li>Dann die gehackten Tomaten zugeben und alles zugedeckt ca. 10 Minuten k\u00f6cheln. Gegen Ende den geriebenen K\u00e4se unterr\u00fchren.<\/li>\n\n\n\n<li>Wenig Zucker beigeben und mit Salz und Pfeffer abschmecken.<\/li>\n\n\n\n<li>Parallel dazu die Teigwaren al dente kochen und vor dem Abgiessen eine Tasse Kochwasser entnehmen.<\/li>\n\n\n\n<li>Am Schluss die Sauce mit den Teigwaren gut vermischen und noch etwas Kochwasser beigeben.<\/li>\n\n\n\n<li>In eine vorgew\u00e4rmte Schale geben und die Petersilie und\/oder Basilikum dar\u00fcber streuen.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Auf dem Teller nat\u00fcrlich den restlichen K\u00e4se dar\u00fcber reiben.<\/li>\n\n\n\n<li>Das Rezept stammt aus dem Bergdorf Amatrice in Latium.<\/li>\n\n\n\n<li>Meistens mit Spaghetti bzw. besser mit Bucatini (dickere R\u00f6hrenspaghetti).<\/li>\n<\/ul>\n\n\n\n<div style=\"height:46px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-2
