Die sind aber dann immer frittiert. Also viel Fett und Kalorien. An heissen Sommertagen mag ich die rohen Sommerrollen. Die Reisbl\u00e4tter sind die selben wie bei den frittierten. Die F\u00fcllung schmeckt aber viel frischer und intensiver als bei den gebratenen.<\/p>\n\n\n\n<p><strong><u>Vegetarische Sommerrollen<\/u><\/strong><\/p>\n\n\n\n<p>Vietnam (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>12 Bl\u00e4tter Reispapier, rundes, ca. 20-22 cm Durchmesser<\/li>\n\n\n\n<li>100g d\u00fcnne asiatische Glasnudeln<\/li>\n\n\n\n<li>eine grosse Handvoll Eisbergsalat<\/li>\n\n\n\n<li>2 Karotten<\/li>\n\n\n\n<li>1 Salatgurke<\/li>\n\n\n\n<li>2 Peperoncini<\/li>\n\n\n\n<li>1 rote Peperoni<\/li>\n\n\n\n<li>eine grosse Handvoll Mungosprossen<\/li>\n\n\n\n<li>frischer Pfefferminz<\/li>\n\n\n\n<li>eine Daumenspitze frischer Ingwer<\/li>\n\n\n\n<li>eine Handvoll frischer Koriander<\/li>\n\n\n\n<li>80g Erdn\u00fcsse<\/li>\n\n\n\n<li>Sojasauce<\/li>\n\n\n\n<li>Fischsauce<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die Glasnudeln nach Packungsbeilage im kochenden Wasser garen (ca. 2 Minuten) und dann sofort kalt abschrecken. Gut abtropfen und mit etwas Sojasauce mischen. Beiseite legen.<\/li>\n\n\n\n<li>Gem\u00fcse (Salat, Karotten, Salatgurke, Peperoncini, Peperoni, Mungosprossen) in feine 4cm lange Streifen schneiden. Die Salatgurke zuerst entkernen!<\/li>\n\n\n\n<li>Die Gew\u00fcrze Pfefferminz, Ingwer und Koriander klein schneiden.<\/li>\n\n\n\n<li>Die Erdn\u00fcsse im M\u00f6rser zerstampfen.<\/li>\n\n\n\n<li>Gem\u00fcse, Gew\u00fcrze und N\u00fcsse in einer Schale von Hand gut vermischen. Zuerst einige Spritzer Fischsauce zugeben. Das ist dann die Gem\u00fcsef\u00fcllung.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die Reisbl\u00e4tter nacheinander:<ul><li>Ca. 30 Sekunden in einen mit lauwarmem Wasser gef\u00fcllten Teller legen zum Einweichen.<\/li><\/ul><ul><li>Sorgf\u00e4ltig auf einem K\u00fcchentuch ausbreiten zum Belegen mit der F\u00fcllung.<\/li><\/ul><ul><li>Waagrecht mit der Gem\u00fcsef\u00fcllung belegen und dann mit etwas weniger Glasnudeln. Einen Rand frei lassen zum seitlichen Einklappen der Rolle. Nicht zu viel F\u00fcllung!<\/li><\/ul>\n<ul class=\"wp-block-list\">\n<li>Die Bl\u00e4tter zuerst seitlich einklappen und dann vertikal straff einrollen, so dass es gut zusammenklebt aber nicht platzt.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Mit Sojasauce, Springroll-Sauce, Sambal Oelek etc. servieren.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die trockenen Reispapier-Bl\u00e4tter sind sehr zerbrechlich!<\/li>\n\n\n\n<li>Nicht zu viel reinpacken. Besser mehr kleine Rollen als wenig grosse.<\/li>\n\n\n\n<li>Nicht vegetarisch kann man z.B. Cocktail Crevetten kurz in Sesam\u00f6l anbraten und in die F\u00fcllung geben.<\/li>\n<\/ul>\n\n\n\n<div style=\"height:45px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<figure
