Einmal aus Spanien, andermal aus Portugal. Eine Fischpfanne eben. Oder bei reichlich Fl\u00fcssigkeit auch eine Fischsuppe. Einfach herrlich mediterran! Die Cataplana Algarvia kommt von der Algarve. Dort werden die Cataplana-Pfannen aus Kupfer geh\u00e4mmert. Sie haben einen verschliessbaren Deckel. Ich koche sowas im Le Creuset Profitopf (Flachbr\u00e4ter) aus Gusseisen. Dessen Deckel ist auch dicht und sieht schick aus \ud83d\ude42<\/p>\n\n\n\n<p><strong><u>Cataplana de peixe Algarvia<\/u><\/strong><strong><u><\/u><\/strong><\/p>\n\n\n\n<p>Portugal (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>400g Venusmuscheln (Vongole)<\/li>\n\n\n\n<li>100g Miesmuscheln (alternativ auch einfach 400g Venusmuscheln)<\/li>\n\n\n\n<li>400 g Seeteufel oder anderer fester Fisch<\/li>\n\n\n\n<li>8\u202612 Langustinos mit Kopf und Schale (ca. 400g)<\/li>\n\n\n\n<li>150 g Chorizowurst<\/li>\n\n\n\n<li>1\u20262 Peperoni (je nach Gr\u00f6sse)<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>2\u20263 Knoblauchzehen<\/li>\n\n\n\n<li>3 Tomaten<\/li>\n\n\n\n<li>500g festkochende Kartoffeln<\/li>\n\n\n\n<li>ein paar getrocknete Lorbeerbl\u00e4tter<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>1 EL Tomatenmark<\/li>\n\n\n\n<li>250 ml Weisswein<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>frischer Koriander<\/li>\n\n\n\n<li>Thymian<\/li>\n\n\n\n<li>1 Zitrone<\/li>\n\n\n\n<li>Chilisauce (z.B. Piripiri)<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die beiden Muschelsorten ggf. auftauen, reinigen und in einer Sch\u00fcssel mit kaltem Wasser min. \u00bd Stunde w\u00e4ssern.<\/li>\n\n\n\n<li>Zwiebel halbieren und in d\u00fcnne Schnitze schneiden.<\/li>\n\n\n\n<li>Knoblauch r\u00fcsten, halbieren und mit L\u00f6ffelr\u00fccken zerquetschen.<\/li>\n\n\n\n<li>Peperoni ausnehmen und in feine Streifen schneiden.<\/li>\n\n\n\n<li>Bei den Tomaten den Stielansatz rausschneiden und diese dann ein paar Minuten im kochenden Wasser blanchieren, abk\u00fchlen, enth\u00e4uten und klein schneiden.<\/li>\n\n\n\n<li>Kartoffeln sch\u00e4len und in 3\u20264mm d\u00fcnne Scheiben scheiden.<\/li>\n\n\n\n<li>Chorizo pellen und in 5\u202610mm dicke Scheiben schneiden.<\/li>\n\n\n\n<li>Seeteufel waschen, trocknen und in mundgerechte St\u00fccke schneiden.<\/li>\n\n\n\n<li>Langustinos ggf. auftauen und waschen.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>In einer Bratpfanne oder im Le Creuset Profitopf in reichlich \u00d6l die Zwiebeln, Peperonistreifen und Chorizoscheiben ca. 5 Minuten and\u00fcnsten.<\/li>\n\n\n\n<li>Kartoffeln, Tomaten, Lorbeer und Knoblauch obenauf verteilen.<\/li>\n\n\n\n<li>Tomatenmark, Thymian, Weisswein und ein Schuss Oliven\u00f6l in einem Glas gut mischen und dar\u00fcber giessen. Es soll alles knapp mit Fl\u00fcssigkeit bedeckt sein.<\/li>\n\n\n\n<li>Mit Salz und Pfeffer abschmecken.<\/li>\n\n\n\n<li>Deckel drauf und 10 Minuten k\u00f6cheln.<\/li>\n\n\n\n<li>Etwas umr\u00fchren und die Fischst\u00fccke, Muscheln und zuletzt die Langustinos obenauf legen und etwas Koriander verstreuen.<\/li>\n\n\n\n<li>Deckel drauf und nochmals ca. 15 Minuten k\u00f6cheln, bis die Kartoffeln weich, die Muscheln offen und die Langustinos rosa sind. Dazwischen mit der Holzkelle vorsichtig wieder etwas r\u00fchren, damit nichts anbrennt am Pfannenboden. Dabei je nach Sch\u00e4rfewunsch etwas Chilisauce unterr\u00fchren.<\/li>\n\n\n\n<li>Vor dem Servieren eine halbe Zitrone auspressen. Die andere H\u00e4lfte zum Garnieren verwenden.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Dazu braucht es eigentlich keine Beilage. Ggf. etwas Baguettebrot.<\/li>\n\n\n\n<li>Cataplana heisst sowohl der Fischeintopf aus der Algarve als auch die geh\u00e4mmerte Kupferpfanne mit Deckel, in der sie zubereitet wird. Ein flacher Br\u00e4ter aus Gusseisen ist aber auch sehr gut geeignet. Ideal ist der Le Creuset Profitopf.<\/li>\n\n\n\n<li>Die Cataplana hat viel Fl\u00fcssigkeit. Deshalb besser in h\u00f6heren Tellern (Suppenteller) servieren.<\/li>\n<\/ul>\n\n\n\n<div style=\"height:44px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<figure
