Obschon sie im Inneren Spaniens geboren wurde, kochte sie immer Paella de mariscos, also mit Meeresfr\u00fcchten. So hielt auch ich es Jahrzehnte lang. Die <strong><a href=\"https:\/\/tapas.ch\/wordpress\/paella-rodolfo\/\" target=\"_blank\" rel=\"noreferrer noopener\">Paella Rodolfo<\/a><\/strong> hier im Blog ist meine Interpretation mit Mariscos und optional noch etwas Kaninchen. Erst jetzt wagte ich mich mal an die andere und genauso ber\u00fchmte Paella: die Valenciana. In der hat&#8217;s nur Fleisch und zwar Huhn und Kaninchen. Ebenso speziell sind die weissen Bohnen.<\/p>\n\n\n\n<p>Mein Favorit bleibt die Mariscos.<\/p>\n\n\n\n<p>\u00dcbrigens: Etwas vom Wichtigsten jeder Paella ist am Schluss der <strong>&#8222;Socarrat&#8220;<\/strong>. Das ist der leicht verbrannte Reis direkt auf dem Pfannenboden. \u00c4hnlich der &#8222;Grossmutter&#8220; beim Schweizer K\u00e4sefondue :-)! Den Socarrat erh\u00e4lt man, indem man kurz vor Schluss die Hitze nochmals stark erh\u00f6ht, bis man das Verbrannte leicht riechen kann. Danach sofort servieren.<\/p>\n\n\n\n<p><strong><u>Paella Valenciana<\/u><\/strong><\/p>\n\n\n\n<p>Spanien (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>450g Carnaroli-Reis (Risotto), 2 grosse Tassen<\/li>\n\n\n\n<li>400g Pouletbrustfilet<\/li>\n\n\n\n<li>400g Kaninchenschlegel (2 St\u00fcck)<\/li>\n\n\n\n<li>250g gr\u00fcne Bohnen (frisch oder tiefgefroren)<\/li>\n\n\n\n<li>200g weisse Riesenbohnen gekocht aus der B\u00fcchse (&#8222;Bianchi di Spagna&#8220;, original Garrof\u00f3n Bohnen)<\/li>\n\n\n\n<li>1 Handvoll frische Petersilie<\/li>\n\n\n\n<li>Oliven entsteint, ca. 10 St\u00fcck<\/li>\n\n\n\n<li>Safran, 1 Briefchen<\/li>\n\n\n\n<li>1 W\u00fcrfel Gem\u00fcsebouillon (oder 1 Essl\u00f6ffel Pulver)<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>1 Knoblauchzehe<\/li>\n\n\n\n<li>2 gegrillte und enth\u00e4utete Peperoni aus dem Glas<\/li>\n\n\n\n<li>2 Tomaten<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>1 Teel\u00f6ffel Piment\u00f3n de la Vera (ger\u00e4uchtes Paprika-Pulver)<\/li>\n\n\n\n<li>1 Teel\u00f6ffel Muskatnuss Pulver<\/li>\n\n\n\n<li>Thymian<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die Pouletbrust in 3\u20264cm grosse St\u00fccke schneiden.<\/li>\n\n\n\n<li>Das Kaninchenfleisch mit dem Fleischbeil in etwa 5cm grosse St\u00fccke hauen.<\/li>\n\n\n\n<li>Alles Fleisch mit Pfeffer, Salz und Paprika w\u00fcrzen und von Hand einreiben.<\/li>\n\n\n\n<li>Zwiebel in d\u00fcnne Schnitze und Knoblauch klein schneiden.<\/li>\n\n\n\n<li>B\u00fcchsenpeperoni in mittlere St\u00fccke schneiden.<\/li>\n\n\n\n<li>Die Bohnen beidseitig r\u00fcsten, waschen und im Salzwasser nicht zu weich kochen (ca. 25 Minuten).<\/li>\n\n\n\n<li>Dazwischen die Tomaten auch ein paar Minuten ins kochende Bohnenwasser legen, abk\u00fchlen, h\u00e4uten und kleinschneiden.<\/li>\n\n\n\n<li>Die Paella-W\u00fcrzmischung herstellen:<ul><li>Thymian (frischen mit Schere klein schneiden)<\/li><\/ul><ul><li>Safran, Gem\u00fcsebouillon (W\u00fcrfel oder Pulver), Piment\u00f3n, Muskatpulver<\/li><\/ul>\n<ul class=\"wp-block-list\">\n<li>Salz und Pfeffer<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>In grosser Bratpfanne reichlich Oliven\u00f6l erhitzen.<\/li>\n\n\n\n<li>Die Fleischst\u00fccke zugeben und rundum ca. 3 Minuten heiss anbraten. Dabei den Deckel drauf, weil es stark spritzt. Im Weiteren wird die Paella dann ohne Deckel gekocht.<\/li>\n\n\n\n<li>Den Reis zugeben und ca. 2 Minuten anbraten<\/li>\n\n\n\n<li>Zwiebeln und Knoblauch zugeben und anbraten<\/li>\n\n\n\n<li>Die doppelte Menge des Reises an Wasser zugeben und die Paella-W\u00fcrzmischung unterr\u00fchren.<\/li>\n\n\n\n<li>Dann nach etwas Kochen der Reihe nach gestaffelt die Tomaten, Oliven, Peperoni, vorgekochten gr\u00fcnen Bohnen und gegen Schluss die weissen Bohnen unterr\u00fchren.<\/li>\n\n\n\n<li>Nicht zu stark r\u00fchren, aber doch so, dass nichts anbrennt bzw. verklumpt; nachdem das Wasser zugegeben wurde, nur noch mittlere Hitze verwenden; eher langsam kochen.<\/li>\n\n\n\n<li>Gehackte Petersilie unterr\u00fchren.<\/li>\n\n\n\n<li>Ganz am Schluss, wenn der Reis praktisch gar ist und er alles Wasser aufgesogen hat, auf volle Hitze erh\u00f6hen und nicht mehr r\u00fchren; die Paella soll zuunterst ganz leicht (aber nur leicht!) anbrennen, was einen guten Geschmack gibt.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>H\u00e4uschen-Schnecken geh\u00f6ren eigentlich auch noch in eine Paella Valenciana. Da mir das widerstrebt und die eigentlich nur zur Deko verwendet werden, verzichte ich darauf.<\/li>\n<\/ul>\n\n\n\n<div style=\"height:44px\" aria-hidden=\"true\"
