Urspr\u00fcnglich wurde das Verfahren mit dem Einlegen des Fleisches in Fett verwendet, um die Haltbarkeit zu erh\u00f6hen. Und in der Tat: meine beiden B\u00fcchsen hatten ein Haltbarkeitsdatum von mehreren Jahren! Mit der ersten machte ich schon vor l\u00e4ngerer Zeit ein <strong><a href=\"https:\/\/tapas.ch\/wordpress\/parmentier-de-confit-de-canard\/\" target=\"_blank\" rel=\"noreferrer noopener\">Parmentier de confit de canard<\/a><\/strong>\u00a0&#8211; also einen Kartoffelstock-Enten-Auflauf. Da ist es erw\u00fcnscht, dass das Fleisch zerf\u00e4llt (wie Pulled Pork). Hier beim klassischen Confit de Canard m\u00f6chte man aber die ganzen Schenkel inkl. knuspriger Haut erhalten. Deshalb ist das Handling beim aus der B\u00fcchse nehmen und im Ofen braten anspruchsvoll.<\/p>\n\n\n\n<p><strong><u>Confit de canard<\/u><\/strong><\/p>\n\n\n\n<p>Frankreich (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 B\u00fcchse Enten-Confit mit min. 4 Entenkeulen (aus dem Delikatessenladen oder C&amp;C), Nettogewicht 1 bis 1.5kg<\/li>\n\n\n\n<li>500g Kartoffeln<\/li>\n\n\n\n<li>200g gr\u00fcne Bohnen<\/li>\n\n\n\n<li>2 Karotten<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>1 Knoblauchzehe<\/li>\n\n\n\n<li>Salz (Fleur de Sel)<\/li>\n\n\n\n<li>1 Bund glatte Petersilie<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>getrockneter Thymian<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die B\u00fcchse \u00f6ffnen und auf dem Herd in einen Topf mit heissem Wasser stellen. So lange, bis das Fett fl\u00fcssig ist. Das dauert. Dann die Keulen sehr sorgf\u00e4ltig rausnehmen, denn sie zerfallen leicht! Das \u00d6l abtropfen und nebeneinander mit der Haut nach oben in eine Auflaufform legen. Das fl\u00fcssige Fett in der Dose f\u00fcr sp\u00e4ter bereithalten.<\/li>\n\n\n\n<li>Die Kartoffeln sch\u00e4len und in ca. 1cm dicke Scheiben schneiden.<\/li>\n\n\n\n<li>Die Bohnen waschen und r\u00fcsten (Enden abschneiden).<\/li>\n\n\n\n<li>Karotten r\u00fcsten und halbieren.<\/li>\n\n\n\n<li>Zwiebel, Knoblauch und Petersilie kleinschneiden.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die Keulen oben mit etwas Pfeffer und Thymian bestreuen und ca. 15 Minuten bei 180\u00b0C und Obergrill-Funktion im Ofen backen, bis die Haut sch\u00f6n gold-braun und knusprig ist.<\/li>\n\n\n\n<li>Etwas vom geschmolzenen Entenfett in eine Bratpfanne geben und darin die Kartoffelscheiben beidseitig golden braten. Vor dem Ende mit Knoblauch und Fleur de Sel vermengen. Warm stellen.<\/li>\n\n\n\n<li>Die Bohnen und Karotten im Salzwasser knackig kochen. Abtropfen und ebenfalls in wenig Entenfett zusammen mit den Zwiebeln d\u00fcnsten. Salzen und Pfeffern und auch warmstellen.<\/li>\n\n\n\n<li>Am Schluss Fleisch und Gem\u00fcse in eine geeignete Servierform geben und mit Petersilie bestreuen. Sch\u00f6n sieht das z.B. in einem Le Creuset Profitopf aus. Den stellt man dann vor dem Servieren noch kurz in den heissen Ofen.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Konfieren ist die alte s\u00fcdfranz\u00f6sische Methode, um Lebensmittel (v.a. Fleisch) haltbar zu machen. Da im Fett kein Sauerstoff rankommt, sind die Entenkeulen in der Dose viele Monate bis Jahre haltbar.<\/li>\n\n\n\n<li>Die Dosen-Enten sind gep\u00f6ckelt und gegart und deshalb \u00e4usserst zerbrechlich. Also ganz sachte umgehen damit!<\/li>\n<\/ul>\n\n\n\n<div style=\"height:45px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images
