Ein mediterraner Klassiker. Die Piperrada (E) oder Piperade (F) ist da nicht viel anders. Aber sie kommt aus dem atlantischen Baskenland, das sich im spanisch-franz\u00f6sischen Grenzgebiet befindet. Im Gegensatz zum Ratatouille ist es trockener, mit gestocktem Ei verfeinert und mit dem weltber\u00fchmten Chili Piment d&#8217;Espelette scharf gew\u00fcrzt. Es schmeckt wirklich ausserordentlich gut. Ich liebe es!<\/p>\n\n\n\n<p><strong><u>Piperrada vasca (Piperade Basque)<\/u><\/strong><\/p>\n\n\n\n<p>Baskenland (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 rote und 2 gelbe und\/oder gr\u00fcne Peperoni<\/li>\n\n\n\n<li>400 Gramm Tomaten<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>1 Knoblauchzehe<\/li>\n\n\n\n<li>ein Strauss glatte Petersilie<\/li>\n\n\n\n<li>mediterrane Gartenkr\u00e4uter<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>6 Eier<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>Piment d\u2018Espelette (scharfes baskisches Chilipulver)<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die Peperoni halbieren, putzen, absp\u00fclen und die H\u00e4lften mit der Hautseite nach oben auf ein Backblech legen. Im 230\u00b0C heissen Backofen mit Umluft 20\u202630 Minuten r\u00f6sten, bis die Haut schwarze Blasen wirft. Abk\u00fchlen lassen. Zum besseren Abl\u00f6sen der Haut gerne auch in einem Frischhaltebeutel.<\/li>\n\n\n\n<li>Die Tomaten waschen und den Stielansatz herausschneiden. Dann vierteln und die Kerne und den Saft entfernen. Die restlichen Schnitze in ca. 2cm grosse W\u00fcrfel schneiden.<\/li>\n\n\n\n<li>Die Zwiebel in d\u00fcnne Schnitze schneiden.<\/li>\n\n\n\n<li>Knoblauch und Petersilie klein schneiden.<\/li>\n\n\n\n<li>Die Eier mit einer Gabel verquirlen und mit der H\u00e4lfte der gehackten Petersilie mischen<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die Peperoni h\u00e4uten und in ca. 1cm Streifen schneiden.<\/li>\n\n\n\n<li>Zwiebel und Knoblauch im \u00d6l in einer grossen Bratpfanne sachte and\u00fcnsten.<\/li>\n\n\n\n<li>Die Tomaten zugeben und 10\u202615 Minuten mitk\u00f6cheln. Gegen Schluss auch die ger\u00f6steten Peperoni zugeben. W\u00fcrzen mit Piment d&#8217;Espelette, Salz, Pfeffer und Gartenkr\u00e4utern.<\/li>\n\n\n\n<li>Das fl\u00fcssige Ei dar\u00fcber giessen und zugedeckt ca. 5 Minuten (nicht zu lange!) stocken lassen.<\/li>\n\n\n\n<li>Am Schluss die restliche gehackte Petersilie dar\u00fcberstreuen und servieren.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Optional mit leicht anger\u00f6steten Schinken- oder Speckstreifen servieren. Oder wie ich hier mit Chorizo-Wurst.<\/li>\n\n\n\n<li>Die Piperrada ist in der spanischen Version wie ein Pisto\/Ratatouille. Bei der eher franz\u00f6sisch-baskischen Version ist das Ei essenziell. Sozusagen ein Gem\u00fcse-Omelett.<\/li>\n<\/ul>\n\n\n\n<div style=\"height:37px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images
