Das wirklich Wahre ist aber eine Caf\u00e9 de Paris Butter. Zu kaufen gibt es diese sozusagen originale praktisch nicht. Erfunden wurde sie in einem Restaurant in Genf und das Originalrezept ist bis heute unbekannt, d.h. geheim. Dieses hier unten ist die Quintessenz vieler Rezepte &#8211; wie so oft bei meinen Kochabenteuern. Siehe auch <a href=\"https:\/\/de.wikipedia.org\/wiki\/Caf%C3%A9_de_Paris\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Wikipedia<\/strong><\/a>.<\/p>\n\n\n\n<p><strong><u>Caf\u00e9 de Paris Butter (z.B. zum Entrec\u00f4te Caf\u00e9 de Paris)<\/u><\/strong><\/p>\n\n\n\n<p>Frankreich\/Schweiz (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>z.B. 150g Butter<\/li>\n\n\n\n<li>\u00bc\u2026\u00bd Zwiebel<\/li>\n\n\n\n<li>1 Knoblauchzehe<\/li>\n\n\n\n<li>je eine Hand voll<ul><li>frische Petersilie<\/li><\/ul><ul><li>frischer Majoran<\/li><\/ul><ul><li>frischer Thymian<\/li><\/ul><ul><li>frischer Estragon<\/li><\/ul>\n<ul class=\"wp-block-list\">\n<li>frischer Dill<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>1\u20262 eingelegte Sardellenfilets<\/li>\n\n\n\n<li>1 Teel\u00f6ffel kleine eingelegte Kapern<\/li>\n\n\n\n<li>1 Spritzer Worcestersauce<\/li>\n\n\n\n<li>1cl Cognac<\/li>\n\n\n\n<li>1 Teel\u00f6ffel Tomatenmark<\/li>\n\n\n\n<li>1 Teel\u00f6ffel scharfer Senf<\/li>\n\n\n\n<li>1 Teel\u00f6ffel Currypulver<\/li>\n\n\n\n<li>1 Teel\u00f6ffel ger\u00e4uchertes Paprikapulver (Piment\u00f3n de la Vera)<\/li>\n\n\n\n<li>wenig Piment d\u2019Espelette (Chilipulver)<\/li>\n\n\n\n<li>1 Schuss Zitronensaft<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die Butter lange bei Raumtemperatur sehr weich werden lassen und dann in eine Sch\u00fcssel geben.<\/li>\n\n\n\n<li>Alle frischen Kr\u00e4uter, Zwiebel, Kapern und Sardellen sehr klein schneiden. Den Knoblauch pressen.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Alle Zutaten zu der Butter in der Schale geben und mit einem L\u00f6ffel alles sehr gut vermengen.<\/li>\n\n\n\n<li>Die Masse auf ein grosses St\u00fcck Haushaltfolie l\u00e4ngs verteilen und dann zu einer 2\u20263cm dicken Wurst einrollen. Die Enden verknoten.<\/li>\n\n\n\n<li>Im K\u00fchlschrank wieder hart werden lassen.<\/li>\n\n\n\n<li>Bei Bedarf k\u00f6nnen dann Butter-R\u00e4dchen abgeschnitten werden.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die Caf\u00e9 de Paris Butter wurde in Genf (Schweiz) erfunden. Sie ist heute weltbekannt und wird vorwiegend zu edlem, gegrilltem Fleisch verwendet.<\/li>\n\n\n\n<li>Man kann die Butter einfrieren und portionenweise verbrauchen.<\/li>\n\n\n\n<li>Beim Entrec\u00f4te Caf\u00e9 de Paris wird recht viel Butter verwendet. Man verfl\u00fcssigt sie durch Erw\u00e4rmen und leert sie in die heisse Schale, wo man dann das aufgeschnittene Entrec\u00f4te legt. Dann noch etwas Butter dar\u00fcber leeren.
