{"id":85223,"date":"2023-09-06T15:44:21","date_gmt":"2023-09-06T13:44:21","guid":{"rendered":"https:\/\/tapas.ch\/wordpress\/?p=85223"},"modified":"2025-02-24T23:52:15","modified_gmt":"2025-02-24T22:52:15","slug":"pisto-manchego-spanisches-ratatouille","status":"publish","type":"post","link":"https:\/\/tapas.ch\/wordpress\/pisto-manchego-spanisches-ratatouille\/","title":{"rendered":"Pisto Manchego (spanisches Ratatouille)"},"content":{"rendered":"\n<p>Der Pisto ist ein ganz einfaches spanisches Gem\u00fcsegericht \u00e4hnlich eines Ratatouilles. <\/p>\n\n\n\n<p><strong><u>Pisto Manchego (spanisches Ratatouille)<\/u><\/strong><\/p>\n\n\n\n<p>Spanien (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 Zwiebel<\/li>\n\n\n\n<li>2 Knoblauchzehen<\/li>\n\n\n\n<li>Je 1 rote und gr\u00fcne Peperoni<\/li>\n\n\n\n<li>1 Zucchino<\/li>\n\n\n\n<li>1 Aubergine<\/li>\n\n\n\n<li>400g passierte Tomaten aus der B\u00fcchse<\/li>\n\n\n\n<li>je ein grosses Ei pro Person<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>1 Schuss Weisswein<\/li>\n\n\n\n<li>1 Prise Zucker<\/li>\n\n\n\n<li>ein paar getrocknete Lorbeerbl\u00e4tter<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>ggf. eine Prise Piment d&#8217;Espelette<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Zwiebel und Knoblauch r\u00fcsten und klein schneiden.<\/li>\n\n\n\n<li>Alle Gem\u00fcsesorten r\u00fcsten und in wirklich kleine W\u00fcrfel schneiden. Die Peperoni (knapp 1cm) noch etwas kleiner als der Rest (ca. 1.5cm).<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>In der Bratpfanne im \u00d6l Zwiebel und Knoblauch sachte and\u00fcnsten.<\/li>\n\n\n\n<li>Dann die Peperoni, die Zucchini und schliesslich die Aubergine hintereinander im Abstand von etwa 4 Minuten zugeben und auch sehr sachte, d.h. bei wenig Hitze, d\u00fcnsten und umr\u00fchren.<\/li>\n\n\n\n<li>Nach ca. 15 Minuten einen Schuss Weisswein beigeben. Kurz einkochen.<\/li>\n\n\n\n<li>Dann die Tomaten zugeben.<\/li>\n\n\n\n<li>Mit Salz und Pfeffer abschmecken. Ebenso eine Prise Zucker beigeben und die Lorbeerbl\u00e4tter.<\/li>\n\n\n\n<li>Wenn man&#8217;s gerne etwas scharf hat, eine Prise Piment zugeben.<\/li>\n\n\n\n<li>Zudecken und 40 Minuten bei tiefer Hitze ganz knapp k\u00f6cheln.<\/li>\n\n\n\n<li>Es soll am Ende saftig sein, aber praktisch keine Fl\u00fcssigkeit mehr haben. Wenn&#8217;s zu fl\u00fcssig ist, gegen Ende den Deckel entfernen.<\/li>\n\n\n\n<li>Nach Belieben die Lorbeerbl\u00e4tter entfernen.<\/li>\n\n\n\n<li>Parallel dazu die Eier in der Bratpfanne mit etwas \u00d6l zu Spiegeleiern braten. Im Ofen warm stellen und vor dem Servieren oben auf den Pisto legen.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Wichtig und traditionell ist, dass der Pisto lange bei wenig Hitze gek\u00f6chelt wird.<\/li>\n\n\n\n<li>Vom Ratatouille unterscheidet er sich vor allem dadurch, dass das Gem\u00fcse sehr klein geschnitten wird und dass es fast keine Fl\u00fcssigkeit mehr drin hat.<\/li>\n\n\n\n<li>Kann heiss oder auch kalt gegessen werden.<\/li>\n\n\n\n<li>Mit frischem Brot geniessen!<\/li>\n<\/ul>\n\n\n\n<div style=\"height:49px\" aria-hidden=\"true\"
