Ein herrlicher Fischeintopf mit Seeteufel und Kartoffeln. Suquet heisst es in den Comunidades Catalunya und Valencia. Im restlichen Spanien gibt es Calderetas. Und die sind sehr \u00e4hnlich wie das Suquet. Eine Caldera oder Caldereta ist ein Kochkessel. Und im \u00fcbertragenen Sinne eben ein Eintopf. Gibt es mit Fleisch oder Fisch. Sehr bekannt ist die Caldereta de pescado y mariscos. Ein sehr reichhaltiges und entsprechend teureres Festmahl.<\/p>\n\n\n\n<p>Es basiert auf den zwei typisch spanischen Saucen Sofrito (Tomaten\/Peperoni) und Majado (Brot\/Mandeln\/Gew\u00fcrze). Majado heisst gem\u00f6rsert, weil die Zutaten im M\u00f6rser zerstampft werden. Auf Katalonisch ist das die Picada. Dazu kommen Kartoffeln und nat\u00fcrlich die grosse Vielfalt an Meerestieren (mariscos). Ist eine Geschmacksexplosion!<\/p>\n\n\n\n<p><strong><u>Caldereta de pescado y mariscos<\/u><\/strong><\/p>\n\n\n\n<p>Spanien (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>300g fester Fisch (ideal ist Seeteufel)<\/li>\n\n\n\n<li>800g Kartoffeln<\/li>\n\n\n\n<li>200g (aufgetaut) gesch\u00e4lte Gambas (gekocht oder roh)<\/li>\n\n\n\n<li>6 ganze rohe Langostinos (mit Kopf)<\/li>\n\n\n\n<li>200g (aufgetaut) Tintenfischringe<\/li>\n\n\n\n<li>100g Miesmuscheln (gekocht oder roh)<\/li>\n\n\n\n<li>150g Venusmuscheln (gekocht oder roh)<\/li>\n\n\n\n<li>1 gr\u00fcne Peperoni<\/li>\n\n\n\n<li>1 Zwiebel, 2 Knoblauchzehen<\/li>\n\n\n\n<li>eine Hand voll frische Petersilie<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>2dl Weisswein<\/li>\n\n\n\n<li>ca. 3 Essl\u00f6ffel Fischfondspulver<\/li>\n\n\n\n<li>400g gehackte Tomaten (aus der B\u00fcchse)<\/li>\n\n\n\n<li>ein paar getrocknete Lorbeerbl\u00e4tter<\/li>\n\n\n\n<li>2 Teel\u00f6ffel Piment\u00f3n de la Vera (ger\u00e4uchertes Paprikapulver)<\/li>\n\n\n\n<li>1 Prise Zucker<\/li>\n\n\n\n<li>Salz und Pfeffer (und wenn&#8217;s etwas scharf sein soll, eine Prise Piment d&#8217;Espelette)<\/li>\n\n\n\n<li>f\u00fcr die Majado:<ul><li>1 weitere Knoblauchzeheca. 3 alte Brotscheiben (entrindet ca. 50g)40g Mandeln (Splitter oder ganze gesch\u00e4lte)ein paar Safranf\u00e4den und eine Prise Zimtpulver<\/li><\/ul>\n<ul class=\"wp-block-list\">\n<li>je 1 Schuss Sherry und Weisswein<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die Majado-W\u00fcrzpaste herstellen:<ul><li>Knoblauchzehe klein hacken.Brot in W\u00fcrfel schneiden und in der Bratpfanne mit etwas \u00d6l leicht braun r\u00f6sten.Dann auch die Mandeln zugeben und leicht r\u00f6sten.Safran, Zimt, Knoblauch, Mandeln, Brot, Salz und Pfeffer in einem M\u00f6rser gut zerstampfen. Das braucht ziemlich Zeit und Kraft.<\/li><\/ul>\n<ul class=\"wp-block-list\">\n<li>Wenig Oliven\u00f6l und je 1 Schuss Sherry und Weisswein untermischen.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Es soll cremig sein, nicht zu trocken. Im M\u00f6rser beiseitestellen.<\/li>\n\n\n\n<li>Den Seeteufel in Portionen schneiden und mit etwas Salz und Pfeffer einreiben.<\/li>\n\n\n\n<li>Zwiebel in Schnitze schneiden und den Knoblauch klein schneiden.<\/li>\n\n\n\n<li>Die Peperoni entkernen und in sehr kleine W\u00fcrfel schneiden.<\/li>\n\n\n\n<li>Kartoffeln sch\u00e4len und in mundgerechte St\u00fccke brechen (anschneiden und dann brechen).<\/li>\n\n\n\n<li>Petersilie klein schneiden.<\/li>\n\n\n\n<li>Die Muscheln und Tintenfisch reinigen bzw. waschen und abtropfen.<\/li>\n\n\n\n<li>In einem Topf nicht zu viel Salzwasser zum Kochen bringen (5dl reichen) und alle Muscheln und die Langostinos ca. 4 Minuten heiss d\u00e4mpfen, bis die Muscheln offen sind.<\/li>\n\n\n\n<li>Die Meeresfr\u00fcchte mit einer Schaumkelle rausnehmen und abtropfen. Von den Langostinos die K\u00f6pfe abtrennen. Den Rest in einem Teller beiseitelegen.<\/li>\n\n\n\n<li>Die Langostino-K\u00f6pfe wieder ca. 3 Minuten ins weiter kochende Wasser geben und mit einer Kelle gut ausdr\u00fccken und dann entsorgen. Sie dienen als Geschmackgeber.<\/li>\n\n\n\n<li>Fischfondspulver zugeben. Das ist dann unser Fischfonds.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>In Bratpfanne mit reichlich \u00d6l Zwiebeln, Knoblauch und Peperoniw\u00fcrfel sachte glasig d\u00fcnsten.<\/li>\n\n\n\n<li>Dann den Tintenfisch zugeben und allseitig ca. 5 Minuten anbraten.<\/li>\n\n\n\n<li>Die gehackten Tomaten, den Lorbeer und eine Prise Zucker zugeben und so lange k\u00f6cheln, bis die Sauce (= Sofrito) ziemlich eingedickt ist. Min. 20 Minuten. Am besten ohne Deckel.<\/li>\n\n\n\n<li>Die Kartoffeln zugeben und kurz k\u00f6cheln und umr\u00fchren. Dabei mit Piment\u00f3n de la Vera w\u00fcrzen.<\/li>\n\n\n\n<li>Dann die vorbereitete Majado und den Weisswein unterr\u00fchren und etwas einkochen.<\/li>\n\n\n\n<li>So viel Fischfond zugeben, bis alles knapp bedeckt ist. Sonst noch Wasser zugeben. Weiter k\u00f6cheln, bis die Kartoffeln noch nicht ganz weich sind (ca. 20 Minuten).<\/li>\n\n\n\n<li>Mit Salz und Pfeffer und ggf. Piment d&#8217;Espelette abschmecken.<\/li>\n\n\n\n<li>Fisch, Muscheln und Gambas in die Fl\u00fcssigkeit legen und ca. 10 Minuten zugedeckt k\u00f6cheln.<\/li>\n\n\n\n<li>Gegen Schluss auch als Dekoration die gek\u00f6pften Langostinos obenauf legen.<\/li>\n\n\n\n<li>Die Petersilie dar\u00fcber streuen und heiss servieren.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die Caldereta ist ein Eintopf in vielen Regionen Spaniens mit Fisch aber auch mit Fleisch.<\/li>\n\n\n\n<li>Mit zus\u00e4tzlich Fleisch: 300g Schweinehalsw\u00fcrfel (3cm) mit Mehl best\u00e4uben und ganz am Anfang der Zubereitung im \u00d6l alleine heiss anbraten. Dann weniger heiss mit Zwiebeln etc. gem\u00e4ss oben weiterfahren.<\/li>\n\n\n\n<li>Sie ist dem katalanischen Suquet sehr \u00e4hnlich.
