Zuerst schien mir das Rezept simpel: Spaghetti, Zucchini, K\u00e4se, Basilikum, Knoblauch und viel Oliven\u00f6l nat\u00fcrlich. That&#8217;s it. Dazu noch eine Legende der Entstehung auf der Halbinsel Sorrent. Je mehr ich mich im Google aber umschaute, desto verwirrender wurden die unz\u00e4hligen Versionen von Annemarie bis Jamie und zur\u00fcck. Wie oft ging ich dann zu YouTube \u00fcber und da waren dann fast nur noch original ItaliernerInnen am Werk. Und jetzt war das einfache Rezept pl\u00f6tzlich wieder einfach. Wenn man es vor der Kamera vorkochen muss, l\u00e4sst sich eben nicht mehr so viel Mist erz\u00e4hlen wie beim schreiben.<\/p>\n\n\n\n<p><strong><u>Spaghetti alla Nerano<\/u><\/strong><\/p>\n\n\n\n<p>Italien (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>600g Spaghetti<\/li>\n\n\n\n<li>700g Zucchini (keine Angst, die zerfallen stark!)<\/li>\n\n\n\n<li>200g Provolone K\u00e4se pikant<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>2 Knoblauchzehen<\/li>\n\n\n\n<li>1 Bund frisches Basilikum<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Zucchini in ca. 2mm d\u00fcnne Scheiben schneiden. Mit einer &#8222;Mandoline&#8220; von Hand oder mit der K\u00fcchenmaschine hobeln.<\/li>\n\n\n\n<li>Den weichen K\u00e4se mit einer groben Raffel in eine Sch\u00fcssel reiben.<\/li>\n\n\n\n<li>Die Knoblauchzehen r\u00fcsten, halbieren und mit einem L\u00f6ffelr\u00fccken zerquetschen.<\/li>\n\n\n\n<li>Das Basilikum abzupfen und die H\u00e4lfte klein schneiden. Die restlichen Bl\u00e4tter ganz belassen zur Deko am Schluss.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die Zucchinischeibchen in der Bratpfanne mit reichlich \u00d6l (mehrere Millimeter hoch) portionenweise golden frittieren. Nicht zu heiss: Stufe 6 von 9. Das dauert ziemlich lange: 12\u202615 Minuten pro Ration. Mit der Schaumkelle heraussch\u00f6pfen und auf einen mit K\u00fcchenpapier belegten Teller legen zum Entfetten. Das \u00d6l in der Bratpfanne behalten f\u00fcr sp\u00e4ter.<\/li>\n\n\n\n<li>Parallel dazu die Spaghetti in einem grossen Topf im Salzwasser nicht ganz al dente kochen. Nicht zu weich, weil sie sp\u00e4ter noch etwas weiter gegart werden! 1 grosse Tasse Kochwasser absch\u00f6pfen und den Rest ableeren. Die Spaghetti wieder in den Topf zur\u00fcckgeben.<\/li>\n\n\n\n<li>Vom Frittier\u00f6l in der Bratpfanne ziemlich viel entfernen. Die Knoblauchzehen im restlichen \u00d6l allseitig ca. 5 Minuten sachte d\u00fcnsten, damit sie den Geschmack an&#8217;s \u00d6l abgeben. Danach den Knoblauch entsorgen.<\/li>\n\n\n\n<li>Die Zucchini und das klein geschnittene Basilikum in die Bratpfanne geben und im Knoblauch\u00f6l nochmals kurz d\u00fcnsten.<\/li>\n\n\n\n<li>Dann die Spaghetti zugeben und unter die Zucchini r\u00fchren. Ebenfalls den geriebenen K\u00e4se schrittweise unterr\u00fchren. Dabei laufend etwas Spaghetti-Wasser zugeben. Das Ganze soll am Schluss cremig, aber ziemlich fl\u00fcssig sein.<\/li>\n\n\n\n<li>Mit Salz und vor allem reichlich Pfeffer abschmecken.<\/li>\n\n\n\n<li>Entweder direkt in der Bratpfanne servieren oder in eine vorgew\u00e4rmte Sch\u00fcssel geben. Obenauf mit den Basilikumbl\u00e4ttern garnieren.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Den bei uns eher seltenen Provolone K\u00e4se gibt&#8217;s in der Schweiz bei Aldi.<\/li>\n\n\n\n<li>Nerano ist der Ort auf der Halbinsel Sorrent (Neapel), wo das Gericht herkommt.<\/li>\n\n\n\n<li>In gewissen Rezepten wird ein Teil der Zucchini p\u00fcriert. Bei allen original italienischen Rezepten, die ich fand, ist das aber nicht der Fall.<\/li>\n<\/ul>\n\n\n\n<div style=\"height:56px\" aria-hidden=\"true\"
