Viel Knochen, aber mit herrlichem Fleisch zum am besten von Hand abknabbern. Es gibt sie \u00f6fters in Aktion auch von guter Qualit\u00e4t. Da es Schweinefleisch ist, kann und soll es gut gar sein. Die Kunst ist es, dass es nicht austrocknet beim grillen. Also nicht wie bei einem Steak sehr heiss kurz braten, sondern lange bei m\u00e4ssiger Hitze. Eine Variante ist auch, die Ribs zuerst zu kochen und danach noch zu grillen. Sie werden dadurch wirklich extrem weich. Mir aber eher zu weich. Ich mag diese Version nicht so sehr. Meine Lieblingsvariante ist die unten beschriebene: kurz anbraten und danach indirekt lange grillen und immer wieder mit s\u00fcss-w\u00fcrziger Marinade einpinseln. Ein Gedicht!<\/p>\n\n\n\n<p><strong><u>Spareribs auf dem Grill<\/u><\/strong><\/p>\n\n\n\n<p>USA (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>ca. 1.8kg Spareribs (Schweinerippen), z.B. etwa 8 Rippen\/Person<\/li>\n\n\n\n<li>Zutaten f\u00fcr meine BBQ Marinade:<ul><li>reichlich Oliven\u00f6l<\/li><\/ul><ul><li>ein Schuss Essig<\/li><\/ul><ul><li>etwas Senf<\/li><\/ul><ul><li>fl\u00fcssiger Honig oder Ahornsirup oder \u00e4hnliches<\/li><\/ul><ul><li>2 gepresste Knoblauchzehen<\/li><\/ul><ul><li>Pfeffer und\/oder Chili (z.B. Piment d&#8217;Espelette)<\/li><\/ul><ul><li>frische gr\u00fcne Kr\u00e4uter<\/li><\/ul><ul><li>Paprikapulver<\/li><\/ul><ul><li>ein Schuss Chetchup<\/li><\/ul>\n<ul class=\"wp-block-list\">\n<li>ein Schuss s\u00fcsse Sojasauce (Thailand\/Korea)<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die Ribs waschen und abtrocknen.<\/li>\n\n\n\n<li>Dann muss die Silberhaut auf der R\u00fcckseite (Knochenseite, d.h. die Seite, wo kein Fleisch dran ist) abgezogen werden. Mit dem R\u00fccken eines L\u00f6ffels geht das gut. Man hebt an einer Stelle damit die weisse, z\u00e4he, fettige Haut an, l\u00f6st sie auf der ganzen Breite dort ab und kann sie dann in Richtung der beiden Enden abhebeln und von Hand abziehen.<\/li>\n\n\n\n<li>Die Marinade aus obigen Zutaten gut mischen und zusammen mit einem Kochpinsel bereithalten. Sie soll viskos \u2013 also etwas dicklich &#8211; sein.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Den Gasgrill auf 220\u00b0C heizen und dann die Ribs je Seite max. 4 Minuten scharf anbraten.<\/li>\n\n\n\n<li>Dann auf indirektes Grillen wechseln, d.h. nur noch einen Brenner laufen lassen und den so eintarieren, dass im Garraum ca. 160\u00b0C herrschen. Die Ribs dort hinlegen, wo keine Flamme darunter ist. Der Grill-Deckel bleibt nat\u00fcrlich immer zu.<\/li>\n\n\n\n<li>Jetzt min. 45 Minuten so garen, gerne auch l\u00e4nger. Zuerst die Oberseite mit der BBQ Marinade mittels Pinsel gut einpinseln. Danach etwa alle 10 Minuten wenden und wieder neu grossz\u00fcgig einpinseln. Die St\u00fccke werden so sch\u00f6n gl\u00e4nzend dunkelbraun.<\/li>\n\n\n\n<li>Am Schluss die Ribs zum Servieren in St\u00fccke schneiden. Den Rest f\u00fcr weitere G\u00e4nge wieder in den Grill stellen zum Warmhalten.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Spareribs isst man am besten von Hand. So kriegt man am meisten Fleisch vom Knochen ab.<\/li>\n\n\n\n<li>Das herrliche am Geschmack ist die s\u00fcsse BBQ Marinade.<\/li>\n\n\n\n<li>Dazu zum Beispiel ein
