Auf Umwegen! Ich hatte einen leckeren Sack Kimchi im Asia Laden gekauft und suchte im Internet, wozu das Kimchi sonst noch als Beilage taugt. Bisher gibt es das in meinem Blog f\u00fcr den <strong><em><a href=\"https:\/\/tapas.ch\/wordpress\/gebratener-kimchi-reis-kimchi-bokkeum-bap\/\" target=\"_blank\" rel=\"noreferrer noopener\">Gebratenen Kimchi-Reis (Kimchi Bokkeum Bap)<\/a><\/em><\/strong>. Ich war in den 1990er Jahren in Korea und kenne das Essen einigermassen. Kimchi gab&#8217;s da auf jedem Tisch sozusagen als Amuse Bouche. Beim Googeln traf ich dann so auf das Bulgogi, das mir nur schon des lustigen Namens wegen gefiel \ud83d\ude42<\/p>\n\n\n\n<p>Feuerfleisch heisst es, weil es oft auf dem heissen Feuer gebraten wird. Ich tat das auf meiner Grillpfanne. Etwas vom Entscheidenden ist die super s\u00fcsse, dicke koreanische Sojasauce.<\/p>\n\n\n\n<p><strong><u>Bulgogi \u2013 Koreanisches Feuerfleisch<\/u><\/strong><\/p>\n\n\n\n<p>S\u00fcd-Korea (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>ca. 600g hochwertiges Rindfleisch zum nur kurz braten (z.B. \u00e0 la minute)<\/li>\n\n\n\n<li>400g Basmatireis<\/li>\n\n\n\n<li>\u00bd Zwiebel<\/li>\n\n\n\n<li>1\u20262 Knoblauchzehen<\/li>\n\n\n\n<li>3 Fr\u00fchlingszwiebeln<\/li>\n\n\n\n<li>3\u20264 Karotten<\/li>\n\n\n\n<li>1 kleines St\u00fcck frischer Ingwer<\/li>\n\n\n\n<li>\u00bd Birne<\/li>\n\n\n\n<li>80g Shiitake-Pilze<\/li>\n\n\n\n<li>Sesam\u00f6l<\/li>\n\n\n\n<li>Koreanische oder Thail\u00e4ndische s\u00fcsse (!) Sojasauce<\/li>\n\n\n\n<li>4 Essl\u00f6ffel Sesamsamen<\/li>\n\n\n\n<li>1 Schuss Reisessig<\/li>\n\n\n\n<li>2\u20263 Teel\u00f6ffel Sambal Oelek<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Sesamsamen in einer kleinen Pfanne sachte und wenig r\u00f6sten. Nicht anbrennen!<\/li>\n\n\n\n<li>\u00bd Zwiebel, Knoblauch, \u00bd Birne und Ingwer r\u00fcsten.<\/li>\n\n\n\n<li>Die Marinade herstellen aus:<ul><li>obigen 4 ger\u00fcsteten Zutaten<\/li><\/ul><ul><li>ca. 6 Essl\u00f6ffel s\u00fcsse (!) Sojasauce<\/li><\/ul><ul><li>4 Essl\u00f6ffel Sesam\u00f6l<\/li><\/ul><ul><li>1 Schuss Reisessig<\/li><\/ul>\n<ul class=\"wp-block-list\">\n<li>2..3 Teel\u00f6ffel Sambal Oelek (je nachdem wie scharf man es mag)<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n\n\n\n<p>Alles mit dem Stabmixer p\u00fcrieren.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Das Fleisch in d\u00fcnne Pl\u00e4tzchen\/Scheiben schneiden und dann min. 1 Stunde in der Marinade marinieren. Besser eine ganze Nacht.<\/li>\n\n\n\n<li>Fr\u00fchlingszwiebeln r\u00fcsten und in kleine Scheiben schneiden. Gr\u00fcnes und weisses getrennt.<\/li>\n\n\n\n<li>Karotten r\u00fcsten und in feine St\u00e4bchen schneiden.<\/li>\n\n\n\n<li>Pilze r\u00fcsten, waschen und in Streifen schneiden.<\/li>\n\n\n\n<li>Den Reis waschen.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Den Reis im Salzwasser kochen und warmstellen.<\/li>\n\n\n\n<li>Das Fleisch aus der Marinade nehmen und mit wenig Sesam\u00f6l portionenweise im Wok, einer Bratpfanne oder noch besser einer Grillpfanne kurz (ca. 2 Minuten) sehr scharf anbraten und beiseitestellen.<\/li>\n\n\n\n<li>Dann in der Pfanne mit etwas Sesam\u00f6l die Karotten, das Weisse der Fr\u00fchlingszwiebeln und die Shiitake Pilze nacheinander zugeben und ca. 5 Minuten braten, bis alles knackig ist.<\/li>\n\n\n\n<li>Das Fleisch wieder dazugeben und die ger\u00f6steten Sesamsamen sowie einen grossen Schuss s\u00fcsse Sojasauce unterr\u00fchren. Alles kurz aufkochen.<\/li>\n\n\n\n<li>In eine Sch\u00fcssel geben und mit dem Gr\u00fcnen der Fr\u00fchlingszwiebeln bestreuen.<\/li>\n\n\n\n<li>Mit dem Reis servieren.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Etwas Kimchi als Beilage.<\/li>\n<\/ul>\n\n\n\n<div style=\"height:42px\" aria-hidden=\"true\"
