Wenn es in der Nacht -20\u00b0C ist, machen scharfe Speisen doppelt Spass. Gulasch ist ja allgegenw\u00e4rtig. Ich machte mich mal ein bisschen schlau und fand erstaunliche sprachliche Ungereimtheiten. Schliesslich kochte ich ein P\u00f6rk\u00f6lt. <\/p>\n\n\n\n<p><strong><u>Ungarisches Gulasch (P\u00f6rk\u00f6lt)<\/u><\/strong><\/p>\n\n\n\n<p>Ungarn (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>700\u2026800g durchzogenes Rinderragout oder \u00e4hnlich (ca. 3cm W\u00fcrfel)<\/li>\n\n\n\n<li>3 grosse Zwiebeln (ca. 500g)<\/li>\n\n\n\n<li>3 Knoblauchzehen<\/li>\n\n\n\n<li>3 rote Spitz-Peperoni<\/li>\n\n\n\n<li>2 Essl\u00f6ffel Tomatenmark<\/li>\n\n\n\n<li>1 kleine B\u00fcchse gehackte Tomaten (400g)<\/li>\n\n\n\n<li>2dl Rotwein<\/li>\n\n\n\n<li>1 Prise K\u00fcmmel<\/li>\n\n\n\n<li>1 Essl\u00f6ffel Paprikapulver edels\u00fcss<\/li>\n\n\n\n<li>1 Teel\u00f6ffel scharfes Rosenpaprikapulver<\/li>\n\n\n\n<li>1 Handvoll Majoran<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>1 W\u00fcrfel Fleischbouillon<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>wenn man es scharf mag wie ich, ggf. noch etwas Chiliflocken<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Zwiebeln r\u00fcsten, halbieren, in Streifen schneiden und vereinzeln.<\/li>\n\n\n\n<li>Knoblauch klein schneiden.<\/li>\n\n\n\n<li>Peperoni r\u00fcsten und in nicht zu kleine St\u00fccke schneiden.<\/li>\n\n\n\n<li>Ggf. zu grosse Sehnen an den Fleischw\u00fcrfeln wegschneiden.<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>In einem grossen Topf \u2013 am besten einem hohen Gusseisenbr\u00e4ter \u2013 die Zwiebeln sachte aber ziemlich lange (ca. 15 Minuten) im \u00d6l anschwitzen. Sie geben dabei Fl\u00fcssigkeit ab.<\/li>\n\n\n\n<li>Die Fleischw\u00fcrfel zugeben und knapp 10 Minuten allseitig anbraten.<\/li>\n\n\n\n<li>K\u00fcmmel und beide Paprikapulver unterr\u00fchren und kurz mitk\u00f6cheln.<\/li>\n\n\n\n<li>Knoblauch, Majoran und Tomatenmark unterr\u00fchren.<\/li>\n\n\n\n<li>Mit Rotwein abl\u00f6schen, gut mischen und etwas einkochen.<\/li>\n\n\n\n<li>Die gehackten Tomaten beigeben und den Bouillonw\u00fcrfel. Die Fleischw\u00fcrfel sollten jetzt gerade bedeckt sein. Ansonsten etwas Wasser nachf\u00fcllen.<\/li>\n\n\n\n<li>Ca. 1\u00bdh zugedeckt schmoren. Gelegentlich umr\u00fchren. <\/li>\n\n\n\n<li>Dann die Peperoni zugeben. Nochmals ca. 1h k\u00f6cheln, bis die Peperoni sehr weich sind. Dazwischen r\u00fchren und wenn es zu trocken wird, Wasser zugeben. Das Gulasch sollte aber am Schluss nicht zu fl\u00fcssig sein.<\/li>\n\n\n\n<li>Mit Pfeffer (ggf. Chilipulver) und Salz abschmecken. Ungarisches Gulasch soll nat\u00fcrlich etwas feurig sein.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Das, was wir Gulasch nennen, heisst original in Ungarn P\u00f6rk\u00f6lt. Es besteht prim\u00e4r aus Fleischw\u00fcrfeln und Peperoni sowie viel Zwiebeln zum Binden. Die hier verwendeten gehackten Tomaten sind optional. Ungarisches Guly\u00e1s ist bei uns eine Gulaschsuppe. Rindfleisch und Gem\u00fcse mit einer suppen\u00e4hnlichen Konsistenz.<\/li>\n\n\n\n<li>Die S\u00e4migkeit erh\u00e4lt die Sauce des P\u00f6rk\u00f6lt auch ohne Tomaten durch die vielen Zwiebeln, die total zerfallen w\u00e4hrend des langen Kochens.<\/li>\n\n\n\n<li>M\u00f6gliche Beilagen, ausser Brot, z.B.
