
{"id":83132,"date":"2022-11-14T12:25:26","date_gmt":"2022-11-14T11:25:26","guid":{"rendered":"https:\/\/tapas.ch\/wordpress\/?p=83132"},"modified":"2023-02-04T15:10:33","modified_gmt":"2023-02-04T14:10:33","slug":"die-klassiker-sauce-ragu-bolognese","status":"publish","type":"post","link":"https:\/\/tapas.ch\/wordpress\/die-klassiker-sauce-ragu-bolognese\/","title":{"rendered":"Die Klassiker-Sauce: Rag\u00f9 Bolognese"},"content":{"rendered":"\n<p>Bolognese Sauce koche ich immer in gr\u00f6sseren Portionen und verteile sie dann in mehrere Rationenbeh\u00e4lter f\u00fcr den Tiefk\u00fchler.<\/p>\n\n\n\n<p><strong><u>Rag\u00f9 Bolognese Rodolfo (Pasta-Sauce, am besten mit Tagliatelle)<\/u><\/strong><\/p>\n\n\n\n<p>Italien (f\u00fcr 3 Portionen \u00e0 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1kg gehacktes Fleisch (Schwein und Rind gemischt)<\/li>\n\n\n\n<li>350g ger\u00e4ucherte Speckw\u00fcrfel<\/li>\n\n\n\n<li>ca. 3 Stengel vom Stangensellerie (150&#8230;200g), nur die Stengel ohne Kraut<\/li>\n\n\n\n<li>3&#8230;4 Karotten<\/li>\n\n\n\n<li>1 kleiner Lauchstengel<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>1 Knoblauchzehe<\/li>\n\n\n\n<li>5 Essl\u00f6ffel Tomatenmark (aus der Tube)<\/li>\n\n\n\n<li>4dl Rotwein<\/li>\n\n\n\n<li>1 Essl\u00f6ffel Fleischbouillon-Pulver (oder 1 W\u00fcrfel)<\/li>\n\n\n\n<li>2 grosse B\u00fcchsen gesch\u00e4lte Tomaten (2x 800g)<\/li>\n\n\n\n<li>1.5dl Kochrahm<\/li>\n\n\n\n<li>1 Prise Zucker<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>Salz und Gew\u00fcrze nach Belieben<\/li>\n<\/ul>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Das Gem\u00fcse (Sellerie, Karotten, Lauch und Zwiebel) klein schneiden<\/li>\n\n\n\n<li>Die Knoblauchzehe halbieren und mit L\u00f6ffelr\u00fccken platt dr\u00fccken<\/li>\n\n\n\n<li>Das Hackfleisch in einer grossen Sch\u00fcssel von Hand mit den Speckw\u00fcrfeln mischen<\/li>\n<\/ul>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>In einer grossen Bratpfanne mit Oliven\u00f6l das Gem\u00fcse inkl. Zwiebeln ca. 5 Minuten and\u00fcnsten. Das Tomatenmark unterr\u00fchren. Dann alles in die grosse, hohe Kasserole geben, wo der Rag\u00f9 dann gekocht werden soll.<\/li>\n\n\n\n<li>Das Fleisch ebenfalls in der Bratpfanne im Oliven\u00f6l portionenweise (2&#8230;3 Portionen) heiss anbraten. Warten bis die Fl\u00fcssigkeit verdampft ist und das Fleisch leicht Farbe kriegt. Das dauert seine Zeit. Mit der Kelle gr\u00f6ssere Fleischklumpen zerstossen, damit ein feines Hack entsteht. Ebenfalls in die Kasserole geben.<\/li>\n\n\n\n<li>Nach der letzten Fleisch-Portion den Rotwein in die Bratpfanne geben und mit dem Fond kurz aufkochen. Zum Rag\u00f9 in die Kasserole geben.<\/li>\n\n\n\n<li>Das Fleischbouillon-Pulver, die B\u00fcchsentomaten und den Knoblauch beigeben und sehr gut r\u00fchren.<\/li>\n\n\n\n<li>Der Rag\u00f9 soll nun offen min. 3 Stunden leicht k\u00f6cheln. Zwischendurch immer wieder umr\u00fchren. Er soll am Schluss nicht mehr fl\u00fcssig, sondern pappig sein. Bei Verwendung der angegebenen Menge B\u00fcchsentomaten sollte die Konsistenz eigentlich stimmen. Falls er zu trocken wird, etwas Wasser beigeben.<\/li>\n\n\n\n<li>Etwa \u00bd Stunde vor Schluss den Kochrahm, Pfeffer aus der M\u00fchle und eine Prise Zucker unterr\u00fchren.<\/li>\n\n\n\n<li>Weitere Gew\u00fcrze nur nach Wunsch.<\/li>\n<\/ul>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Nur schon aus energetischen Gr\u00fcnden ist es sinnvoll, mehrere Portionen zusammen zu kochen. Der Rag\u00f9 kann hervorragend portionenweise tiefgefroren werden. Die beschriebene Menge ist als Pasta-Sauce f\u00fcr 3&#215;4 Personen gedacht (ca. 3x 0.8l bzw. 3x 1kg).<\/li>\n\n\n\n<li>Da die Zutaten schon sehr w\u00fcrzig sind, sind meiner Meinung nach Salz und Gew\u00fcrze nicht mehr notwendig. Man kann aber selbstverst\u00e4ndlich kurz vor Schluss mediterrane Gew\u00fcrze beigeben.<\/li>\n\n\n\n<li>Der Kochzeit sind keine Grenzen gesetzt. Je l\u00e4nger desto besser wird der Rag\u00f9.<\/li>\n<\/ul>\n\n\n\n<div style=\"height:49px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<figure class=\"wp-block-gallery
