{"id":83008,"date":"2022-11-05T15:47:18","date_gmt":"2022-11-05T14:47:18","guid":{"rendered":"https:\/\/tapas.ch\/wordpress\/?p=83008"},"modified":"2023-02-04T15:12:08","modified_gmt":"2023-02-04T14:12:08","slug":"the-thermomix-experience","status":"publish","type":"post","link":"https:\/\/tapas.ch\/wordpress\/the-thermomix-experience\/","title":{"rendered":"The Thermomix Experience"},"content":{"rendered":"\n<p>Den Ausdruck <a href=\"https:\/\/vorwerk.ch\/thermomix-tm6\" target=\"_blank\" rel=\"noopener\" title=\"\"><strong>Thermomix<\/strong> <\/a>hatte ich schon \u00f6fters vor allem auf der Suche nach spanischen Rezepten erblickt. Konnte mir ausser einem Mixer nicht viel darunter vorstellen. Zudem sind elektrische Maschinen in unserer K\u00fcche mit wenigen Ausnahmen verp\u00f6nt und verbannt \ud83d\ude42 Aber: ich hatte letzte Woche die einmalige Chance, im Thermomix-Kochstudio in Wallisellen (Schweiz) einem kleinen Kochkurs beizuwohnen. Nat\u00fcrlich (fast) alles mit Thermomix. <\/p>\n\n\n\n<p>Der Name Thermomix ist korrekt gew\u00e4hlt: das Ger\u00e4t hat einerseits eine Schneid- und eine R\u00fchrfunktion. Beim R\u00fchren dreht sich das Messer einfach mit der runden (stumpfen) Seite voraus. Und die zweite Funktion ist das &#8222;Thermo&#8220;, also der Kochbeh\u00e4lter kann erhitzt werden. Drehzahl und Temperatur werden nat\u00fcrlich mikroprozessor-genau an den jeweiligen Rezeptschritt angepasst. Intervenieren ist geradezu verboten. Zus\u00e4tzlich ist im Beh\u00e4lter eine genaue Waage integriert. That&#8217;s it. Keine Raketentechnik. Und bis vor nicht so langer Zeit war das offenbar alles. Wenn ich es richtig verstanden habe, mussten die Rezepte im Internet oder auf Papier konsultiert werden. Der aktuelle Thermomix ist da schon eher auf dem Stand der Technik. Er hat einen Touch-Bildschirm und tausende Rezepte, die man suchen und laden kann. Dann gibt einem das Ger\u00e4t jeden einzelnen Koch-Schritt detailliert an. Man arbeitet also das Rezept am Bildschirm ab.<\/p>\n\n\n\n<p>Wir kochten:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>diverse Dip-Saucen (Hummus etc.)<\/li>\n\n\n\n<li>ein Riesling-Schaums\u00fcppchen<\/li>\n\n\n\n<li>Focaccia Fladen<\/li>\n\n\n\n<li>einen Broccoli-Apfel-Salat<\/li>\n\n\n\n<li>ein Gulasch Stroganoff<\/li>\n\n\n\n<li>weissen Reis zum Stroganoff <\/li>\n\n\n\n<li>ein Beeren-Sorbet<\/li>\n<\/ul>\n\n\n\n<p>Mein kritischer Eindruck:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Alles, was teigig, saucig, kleingeschnitten etc. ist, l\u00e4sst sich nat\u00fcrlich perfekt zerkleinern und k\u00f6cheln. Eine perfekte Teigmaschine. Eine perfekte Saucen-Maschine.<\/li>\n\n\n\n<li>Alles, was nicht kleingeschnitten werden soll, ist ungeeignet und musste von Hand geschnitten werden. Ich viertelte z.B. die Champignons f\u00fcr das Stroganoff. Und auch dessen Gew\u00fcrzgurken mussten h\u00e4ndisch in Scheiben geschnitten werden.<\/li>\n\n\n\n<li>F\u00fcr Fleisch ist die Maschine fast g\u00e4nzlich ungeeignet. Lediglich ein sous-vide Kochen von vakuumiertem Fleisch ist m\u00f6glich. Aber das kann ich auch im Ofen oder im Topf. Die geschnittene Stroganoff-Huft mussten wir ganz normal in der Bratpfanne braten und am Schuss zuf\u00fcgen.<\/li>\n\n\n\n<li>Der Reis gelang gut bis sehr gut. Nachdem ich aber in meinem Leben wohl schon hunderttausende Mal diverseste Reise gekocht habe, sehe ich eigentlich keinen Vorteil in der Maschine. Denn auch mir gelingt der Reis gut bis sehr gut \ud83d\ude42<\/li>\n\n\n\n<li>Es gibt nur einen einzigen Beh\u00e4lter bzw. Arbeitsstation. Man kann also nur jeweils etwas auf&#8217;s Mal kochen. Und die Gr\u00f6sse ist sehr beschr\u00e4nkt. Also eher etwas f\u00fcr kleinere Haushalte als f\u00fcr grosse Feten.<\/li>\n<\/ul>\n\n\n\n<p>Fazit:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Als begeisterter Ingenieur gefallen mir (fast) alle Maschinen. Der Thermomix macht einen hervorragenden Eindruck, was Verarbeitung und Technik betrifft. Die Rezepte-F\u00fchrung ist ziemlich idiotensicher.<\/li>\n\n\n\n<li>Das sch\u00f6nste am Kochen: das Braten, die D\u00fcfte, das w\u00fcrzen nach eigenem Geschmack, das Kochen mit dem Auge, das Kombinieren, das gelegentliche Improvisieren, das Abschmecken und-und-und bleiben alle auf der Strecke. <\/li>\n\n\n\n<li>Mit dem Thermomix ist man gezwungen, seriell zu kochen, also eins nach dem anderen. Ich koche oft parallel. Multitasking. Selbst M\u00e4nner k\u00f6nnen das nach langem \u00dcben. Die totale Kochzeit erschien mir deshalb mit dem Thermomix eher l\u00e4nger als konventionell. Und vieles muss lange warm gehalten werden. Beim Fleisch ein absolutes NoGo. Es wurde hart beim warten.<\/li>\n\n\n\n<li>Trotzdem: jede Maschine hat ihre Anh\u00e4nger. Hier wohl die, welche weder Talent noch Willen noch Lust zum Kochen haben. Einen Zeitgewinn sehe ich aber definitiv nicht.<\/li>\n\n\n\n<li>Fazit des Fazits: ich w\u00fcrde das sch\u00f6ne Ding nicht mal geschenkt nehmen. Aber wie arm w\u00e4r&#8216; das Leben, wenn immer alle das selbe denken und lieben?<\/li>\n<\/ul>\n\n\n\n<p>Zum Schluss noch grossen Dank den beiden engagierten Thermomix Instruktorinnen!
