
{"id":806,"date":"2014-11-26T15:27:30","date_gmt":"2014-11-26T14:27:30","guid":{"rendered":"http:\/\/tapas.ch\/wordpress\/?p=806"},"modified":"2023-02-05T22:57:53","modified_gmt":"2023-02-05T21:57:53","slug":"morcilla-frita","status":"publish","type":"post","link":"https:\/\/tapas.ch\/wordpress\/morcilla-frita\/","title":{"rendered":"Morcilla frita"},"content":{"rendered":"<p>(gebratene Blutwurst)<\/p>\n<p><strong>Zutaten<\/strong><\/p>\n<ul>\n<li>1 gekochte Blutwurst (ca. 250g)<\/li>\n<li>1 Zwiebel<\/li>\n<li>Oliven\u00f6l<\/li>\n<li>1 Schuss trockener Sherry<\/li>\n<li>1 Essl\u00f6ffel Zucker<\/li>\n<li>Piment\u00f3n (getrocknete gehackte Chilis)<\/li>\n<li>Weissmehl<\/li>\n<\/ul>\n<p><strong>&nbsp;<\/strong><\/p>\n<p><strong>Vorbereitung<\/strong><strong>&nbsp;<\/strong><\/p>\n<ul>\n<li>Die Zwiebel sehr klein schneiden.<\/li>\n<li>Die Blutwurst vorsichtig in ca. 1.5cm dicke Scheiben schneiden (ca. 8&#8230;10 Scheiben).<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Zubereitung<\/strong><strong>&nbsp;<\/strong><\/p>\n<ul>\n<li>Die Zwiebel bei schwacher Hitze in etwas Oliven\u00f6l ziemlich lange d\u00fcnsten (ca. 8 Minuten).<\/li>\n<li>Den Zucker beigeben und kurz karamelisieren lassen.<\/li>\n<li>Einen grossen Schuss Sherry und je nach Sch\u00e4rfewunsch etwas Piment\u00f3n zugeben. Etwas einkochen lassen. In einer Tasse beiseite stellen.<\/li>\n<li>Die Wurstscheiben vorsichtig im Mehl wenden und dann beidseitig in der Bratpfanne im Oliven\u00f6l braten (ca. 4 Minuten pro Seite). Achtung: die mitteleurop\u00e4ischen Blutw\u00fcrste sind manchmal sehr weich und zerbrechlich! Deshalb am Anfang beide Seiten kurz anbraten.<\/li>\n<li>Die Wurstscheiben in die Servierform legen und mit einem L\u00f6ffel etwas Zwiebelmasse auf jede Scheibe legen.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Tipp<\/strong><strong>&nbsp;<\/strong><\/p>\n<ul>\n<li>Gegebenenfalls im 80\u00b0C Ofen halten und dann sofort heiss servieren.<\/li>\n<li>Blutw\u00fcrste, also Morcillas, sind eine sehr spanische Wurst. Sie werden in verschiedenen Gegenden unterschiedlich hergestellt und auch zubereitet. Am bekanntesten ist die Morcilla de Burgos. In ihr hat es eine recht grosse Menge Reis.<\/li>\n<li>Die meisten Blutwurstrezepte verwenden eine s\u00fcsse Sauce oder Beilage, wie hier die karamelisierten Zwiebeln.<\/li>\n<li>Vinos de Pago sind Weine mit einer speziellen regionalen Klassifizierung.
