
{"id":781,"date":"2014-12-01T14:31:08","date_gmt":"2014-12-01T13:31:08","guid":{"rendered":"http:\/\/tapas.ch\/wordpress\/?p=781"},"modified":"2023-02-05T22:56:31","modified_gmt":"2023-02-05T21:56:31","slug":"mejillones-a-la-marinera","status":"publish","type":"post","link":"https:\/\/tapas.ch\/wordpress\/mejillones-a-la-marinera\/","title":{"rendered":"Mejillones a la marinera"},"content":{"rendered":"<p>(Miesmuscheln)<\/p>\n<p><strong>Zutaten<\/strong><\/p>\n<ul>\n<li>500g Miesmuscheln<\/li>\n<li>1 handvoll frische Petersilie<\/li>\n<li>frische Kr\u00e4uter (Rosmarin, Thymian, Dill etc.)<\/li>\n<li>einige getrocknete Lorbeerbl\u00e4tter<\/li>\n<li>Oliven\u00f6l<\/li>\n<li>Salz (fleur de sel)<\/li>\n<li>Pfeffer<\/li>\n<li>eine Prise Chilipulver (Piment d\u2019Espelette)<\/li>\n<li>1 Prise Zucker<\/li>\n<li>1 Zwiebel<\/li>\n<li>1 Knoblauchzehe<\/li>\n<li>1 kleine B\u00fcchse gehackte Tomaten (400g)<\/li>\n<li>\u00bcl Weisswein<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Vorbereitung<\/strong><strong>&nbsp;<\/strong><\/p>\n<ul>\n<li>Die Muscheln unter fliessendem Wasser gut putzen. Stark offene wegwerfen. B\u00e4rte herausziehen. Ablagerungen mit dem Messer wegkratzen. Danach in einen grossen Topf mit kaltem Wasser stellen.<\/li>\n<li>Zwiebel, Knoblauch, Petersilie und Kr\u00e4uter klein schneiden.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Zubereitung<\/strong><strong>&nbsp;<\/strong><\/p>\n<ul>\n<li>In einer hohen Pfanne im \u00d6l Zwiebeln, Knoblauch, die H\u00e4lfte der Petersilie, Lorbeer und die Kr\u00e4uter and\u00fcnsten, bis die Zwiebeln glasig sind.<\/li>\n<li>Die Muscheln gut vom Wasser abtropfen und in die Pfanne geben. Weisswein zugeben, gut r\u00fchren und 8&#8230;10 Minuten heiss kochen, bis alle Muscheln ge\u00f6ffnet sind. Mehrmals umr\u00fchren.<\/li>\n<li>Die Muscheln mit einem Schauml\u00f6ffel in eine 80\u00b0C heisse Serviersch\u00fcssel sch\u00f6pfen.<\/li>\n<li>In den verbleibenden Sud in der Pfanne die gehackten Tomaten geben sowie Zucker, Pfeffer, Salz und Piment. Nochmals etwas kochen.<\/li>\n<li>Dann den Sud \u00fcber die Muscheln giessen und den Rest der Petersilie dar\u00fcber streuen und leicht unterr\u00fchren.
