Die Paella ist wohl auch so eines. Deshalb hier meine pers\u00f6nliche Rodolfo Version. Was ist speziell daran?<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>all-in-one: Kaninchen, Meeresfr\u00fcchte, Gem\u00fcse<\/li>\n<\/ul>\n\n\n\n<p>Die Paella koche ich in einer sehr grossen Bratpfanne auf dem Herd oder im Sommer in einer Gusspfanne auf dem Holzfeuer.<\/p>\n\n\n\n<p>Etwas vom Wichtigsten jeder Paella ist am Schluss der <strong>&#8222;Socarrat&#8220;<\/strong>. Das ist der leicht verbrannte Reis direkt auf dem Pfannenboden. \u00c4hnlich der &#8222;Grossmutter&#8220; beim Schweizer K\u00e4sefondue :-)! Den Socarrat erh\u00e4lt man, indem man kurz vor Schluss die Hitze nochmals stark erh\u00f6ht, bis man das Verbrannte leicht riechen kann.
