Bisher briet ich das St\u00fcck in der Bratpfanne kurz scharf auf allen Seiten an. Danach kommt es f\u00fcr 2-3 Stunden in den 80\u00b0C Backofen. Mit einem Fleisch-Thermometer misst man die Kerntemperatur. Das neueste Gadget ist mein iGrill Thermometer von Weber mit iPhone App. Da kann man den Temperaturverlauf im Fleisch drinnen sch\u00f6n grafisch \u00fcberwachen w\u00e4hrend man auf der Terrasse den Ap\u00e9ro geniesst \ud83d\ude42<\/p>\n\n\n\n<p>Diesmal versuchte ich es aber mal umgekehrt: zuerst niedergaren und dann vor dem aufschneiden und servieren kurz auf dem Gasgrill braten. Ich w\u00fcrde sagen: kein Unterschied.
