Und man weiss nicht mal genau, wie man sie zubereitet. Minestrone kannte ich vor allem aus dem Knorr-Beutel. In den Skiferien in der kleinen K\u00fcche der Mietwohnung kochte sie fr\u00fcher die Mutter und sp\u00e4ter die Ehefrau. Aufgepeppt mit Wienerli zum Beispiel. War gar nicht so schlecht.<\/p>\n\n\n\n<p>Diesmal wollte ich es wissen. Dazu gab&#8217;s einen Chianti Ser Lapo Riserva, Castello di Fonterutoli von Mazzei.<\/p>\n\n\n\n<p><strong><u>Minestrone<\/u><\/strong><\/p>\n\n\n\n<p>Italien (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>150g getrocknete Borlotti Bohnen<\/li>\n\n\n\n<li>2 grosse Karotten<\/li>\n\n\n\n<li>1 Lauchstange<\/li>\n\n\n\n<li>je nach Jahreszeit Stangen- oder Knollensellerie<\/li>\n\n\n\n<li>2 Kartoffeln<\/li>\n\n\n\n<li>weiteres einheimisches Gem\u00fcse wie roter oder weisser Kohl, Wirz etc. (total 1 kg Gem\u00fcse inkl. alle obigen)<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>1 Knoblauchzehe<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>2dl Weisswein<\/li>\n\n\n\n<li>100g kleine Teigwaren (z.B. Macaroni o.\u00e4.)<\/li>\n\n\n\n<li>1 grosse Fleischtomate<\/li>\n\n\n\n<li>eine Hand voll getrocknete Lorbeerbl\u00e4tter<\/li>\n\n\n\n<li>2 Essl\u00f6ffel Tomatenp\u00fcree aus der Tube<\/li>\n\n\n\n<li>3 Gem\u00fcse-Bouillon W\u00fcrfel<\/li>\n\n\n\n<li>italienische Kr\u00e4uter (frisch oder im Winter getrocknet)<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>Chiliflocken<\/li>\n\n\n\n<li>gen\u00fcgend Parmesank\u00e4se zum reiben<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Die Borlotti Bohnen 12h im Wasser einweichen.<\/li>\n\n\n\n<li>Absp\u00fclen und ca. 30 Minuten mit den Lorbeerbl\u00e4ttern zugedeckt weichkochen. Den Lorbeer entfernen und die Bohnen im Sieb abseihen.<\/li>\n\n\n\n<li>Zwiebel und Knoblauch klein schneiden.<\/li>\n\n\n\n<li>Alles Gem\u00fcse in mundgerechte St\u00fccke schneiden.<\/li>\n\n\n\n<li>Tomate w\u00fcrfeln.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>In einer grossen, hohen Pfanne (z.B. Spaghettipfanne) Zwiebel und Knoblauch im \u00d6l and\u00fcnsten.<\/li>\n\n\n\n<li>Dann alles Gem\u00fcse (ausser die Tomaten) beigeben, r\u00fchren und 10 Minuten d\u00fcnsten.<\/li>\n\n\n\n<li>Tomatenp\u00fcree unterr\u00fchren und mit Wein abl\u00f6schen.<\/li>\n\n\n\n<li>1.5 Liter Wasser mit 3 Bouillonw\u00fcrfeln zugeben und 20 Minuten kochen.<\/li>\n\n\n\n<li>Die abgetropften Bohnen zugeben und weitere 30 Minuten k\u00f6cheln.<\/li>\n\n\n\n<li>Dabei nach 15 Minuten die Teigwaren und Tomate sowie die Kr\u00e4uter beigeben.<\/li>\n\n\n\n<li>Beenden, wenn die Teigwaren al dente sind.<\/li>\n\n\n\n<li>Mit Salz, Pfeffer und Chili abschmecken.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Der Parmesank\u00e4se wird auf dem Teller dar\u00fcber gerieben.<\/li>\n\n\n\n<li>In gewissen Teilen Italiens wird die Minestrone recht scharf zubereitet. So wie ich es mag. Dem kann man mit reichlich Chiliflocken beihelfen.<\/li>\n\n\n\n<li>In vielen Rezepten findet man Speckw\u00fcrfel, die man schon ganz am Anfang mit den Zwiebeln d\u00fcnstet.<\/li>\n\n\n\n<li>Das Ganze dauert ziemlich lange, was nach Adam Riese eine gute Stunde kochen heisst.<\/li>\n\n\n\n<li>In er Lombardei nimmt man anstelle der Nudeln Risotto Reis und in den Bergen Gerste.<\/li>\n\n\n\n<li>Wenn man von der letzten Pasta-Party noch etwas gr\u00fcnen Pesto \u00fcbrig hat, gerne in die Suppe geben.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div style=\"height:27px\"
