Der <em>gelochte Knochen<\/em>, wie das \u00fcbersetzt heisst, enth\u00e4lt das glibbrige Knochenmark. Einige m\u00f6gen das nicht. Ich sage nur, es ist das beste am ganzen Ding. Neben der Cremolata nat\u00fcrlich, die zu diesem Mail\u00e4nder Gericht geh\u00f6rt. Das ist ein sehr w\u00fcrziges Gemisch aus Zitronenschale, Knoblauch und Petersilie und kontrastiert hervorragend zum Fett des Knochens. Neben Mark und Gew\u00fcrz ist nat\u00fcrlich die eigentliche zarte Haxe die Hauptsache. Es war gar nicht einfach, den in der Schweiz aufzutreiben. Aber er entsch\u00e4digte f\u00fcr den Aufwand: geniales Preis-Leistungs-Verh\u00e4ltnis.
