Piment d&#8217;Espelette)<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Vorbereitung<\/strong><\/p>\n<ul>\n<li>Das Fleisch in mittlere W\u00fcrfel schneiden. Sie sollen etwa die Gr\u00f6sse haben zwischen geschnetzeltem und typischem Gulasch.<\/li>\n<li>Zwiebel und Knoblauch klein hacken.<\/li>\n<li>Chorizo pellen, l\u00e4ngs halbieren und in Scheiben schneiden.<\/li>\n<li>Erbsen auftauen<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Zubereitung<\/strong><\/p>\n<ul>\n<li>In einem h\u00f6heren Topf mit Oliven\u00f6l das Rindfleisch scharf anbraten (5\u2026.10 Minuten). Mit Salz und Pfeffer w\u00fcrzen. Ggf. das Wasser ableeren.<\/li>\n<li>Dann Zwiebeln und Knoblauch beigeben und alles bei mittlerer Hitze ca. 5 Minuten gut braten.<\/li>\n<li>Die Schinkenw\u00fcrfel und die Chorizo Scheiben beigeben und ebenso ca. 5 Minuten braten. Immer gut umr\u00fchren.<\/li>\n<li>Den Weisswein beigeben und wenige Minuten etwas eindicken lassen.<\/li>\n<li>Die gehackten Tomaten, den Bouillonw\u00fcrfel und die Lorbeerbl\u00e4tter unterr\u00fchren und wieder aufkochen lassen.<\/li>\n<li>50 Minuten zugedeckt k\u00f6cheln lassen. Dazwischen umr\u00fchren und etwas Wasser beigeben, wenn es zu dick wird.<\/li>\n<li>Dann die gr\u00fcnen Erbsen unterr\u00fchren und nochmals 10 Minuten k\u00f6cheln.<\/li>\n<li>Mit Salz und etwas Piment abschmecken. Ist aber meist nicht mehr n\u00f6tig.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Tipp<\/strong><\/p>\n<ul>\n<li>Carcamusas wird sowohl als ganze Mahlzeit als auch als Tapa serviert. Die hier angegebene Menge ist f\u00fcr ein ganzes Mahl f\u00fcr 4 Personen. F\u00fcr eine kleine Tapas Ration einfach etwa ein Drittel nehmen.<\/li>\n<li>Carcamusas sollen durchaus etwas scharf sein. Sind sie aber alleine schon wegen der w\u00fcrzigen Chorizo Wurst.<\/li>\n<li>Mit viel Weissbrot geniessen (Baguette) und\/oder mit Bratkartoffeln.<\/li>\n<li>Viele Spanier nehmen Schweinefleisch, auch weil es billiger ist. Mit Rind ist es aber ges\u00fcnder und kr\u00e4ftiger.<\/li>\n<li>Die Spanier nehmen nat\u00fcrlich keine Schweizer &#8222;Schinkenw\u00fcrfeli&#8220;, sondern schneiden welche vom Jamon Serrano.
