{"id":476,"date":"2014-12-29T14:06:34","date_gmt":"2014-12-29T13:06:34","guid":{"rendered":"http:\/\/tapas.ch\/?p=476"},"modified":"2023-02-05T22:45:25","modified_gmt":"2023-02-05T21:45:25","slug":"calcots","status":"publish","type":"post","link":"https:\/\/tapas.ch\/wordpress\/calcots\/","title":{"rendered":"Cal\u00e7ots"},"content":{"rendered":"<p>(gebratene Fr\u00fchlingszwiebeln)<\/p>\n<p><strong>Zutaten<\/strong><strong>&nbsp;<\/strong><\/p>\n<ul>\n<li>6&#8230;9 Fr\u00fchlingszwiebeln (je nach Gr\u00f6sse, die Zwiebeln fallen beim braten sehr stark zusammen)<\/li>\n<li>Oliven\u00f6l<\/li>\n<li>Balsamico Essig<\/li>\n<li>Salz (Fleur de Sel)<\/li>\n<li>Piment d\u2019Espelette (baskisches Chili-Pulver)<\/li>\n<\/ul>\n<p><strong>&nbsp;<\/strong><\/p>\n<p><strong>Vorbereitung<\/strong><strong>&nbsp;<\/strong><\/p>\n<ul>\n<li>Die Fr\u00fchlingszwiebeln waschen, ggf. die \u00e4usserste Schale entfernen.<\/li>\n<li>Den Wurzelansatz und die weniger sch\u00f6nen Enden des Gr\u00fcnen wegschneiden.<\/li>\n<li>Die Zwiebeln l\u00e4ngs vierteilen und dann quer halbieren.<\/li>\n<\/ul>\n<p><strong>&nbsp;<\/strong><\/p>\n<p><strong>Zubereitung<\/strong><strong>&nbsp;<\/strong><\/p>\n<ul>\n<li>Die Fr\u00fchlingszwiebeln in einer grossen Bratpfanne bei nur mittlerer Hitze ziemlich lange in nicht zu viel Oliven\u00f6l braten, bis sie rundum leicht goldbraun sind. Bei gr\u00f6sserer Menge in zwei Portionen braten.<\/li>\n<li>Wenn alle Portionen gebraten sind, alles zusammenf\u00fchren und mit Fleur de Sel und Piment d\u2019Espelette (alternativ normales Salz und Pfeffer) w\u00fcrzen. Etwas Oliven\u00f6l und Balsamico Essig unterr\u00fchren.<\/li>\n<li>In die Servierform geben und ziehen lassen.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Tipp<\/strong><\/p>\n<ul>\n<li>Die originalen katalonischen Cal\u00e7ots werden auf dem offenen Feuer gegrillt und zum essen in eine w\u00fcrzige Sauce getunkt. Ich brate sie manchmal auch auf dem Gasgrill in einer gelochten Aluschale. Davor mit \u00d6l einreiben, damit sie nicht kleben.<\/li>\n<li>Kann kalt oder warm serviert werden.<\/li>\n<li>Perelada ist ein Ort ganz im Nordosten Spaniens (Region Empord\u00e0).
