{"id":4320,"date":"2017-02-05T21:56:33","date_gmt":"2017-02-05T20:56:33","guid":{"rendered":"http:\/\/tapas.ch\/wordpress\/?p=4320"},"modified":"2023-02-05T20:17:50","modified_gmt":"2023-02-05T19:17:50","slug":"la-grande-bouffe","status":"publish","type":"post","link":"https:\/\/tapas.ch\/wordpress\/la-grande-bouffe\/","title":{"rendered":"La Grande Bouffe"},"content":{"rendered":"<p>Nach einem regnerischen Winter-Sonntag gel\u00fcstete es mich nach einem unvern\u00fcnftigen franz\u00f6sischen Fressen: La Grande Bouffe.<\/p>\n<p>Das Cassoulet ist ein s\u00fcdfranz\u00f6sischer Eintopf aus dem Languedoc. Weisse Bohnen mit Karotten, Tomaten, mediterranen Gew\u00fcrzen und viel Fleisch. Nach fast einer Woche bewusster Vegi-Ern\u00e4hrung eine S\u00fcnde, wie bei Adam und Eva. S\u00fcnden sind sch\u00f6n. Die Herstellung ist einfach aber zeitaufw\u00e4ndig. Die Borlotti-Bohnen muss man am Vortag einweichen und dann noch eine Dreiviertelstunde kochen. Immerhin kann man dabei den Rest vorbereiten und kochen. Danach eine Stunde in den heissen Ofen. Grunds\u00e4tzlich jede Art von Fleisch. Vor allem ungesundes Schwein. Die Franzosen nehmen gerne auch mal Gans, Ente und Lamm. Mir gen\u00fcgen diesmal Speck, Schweinsvoressen, Schweinsbratwurst und H\u00fchnerfl\u00fcgel. Das T\u00fcpfchen auf&#8217;s <em>I<\/em> ist dann in der Halbzeit im Ofen etwas Butter und ziemlich viel Paniermehl dar\u00fcbergestreut. Das gibt im Idealfall eine harte d\u00fcnne Kruste, wenn man den Eintopf aus dem Ofen nimmt. Die drei M\u00e4dchen einer Frau (Isabelle Mangeart), die sich pers\u00f6nlich vollkommen umorientierte und im Languedoc ein Weingut aufbaute. Chapeau!<\/p>\n<ul>\n<li>Clos des Nines<\/li>\n<li>Languedoc<\/li>\n<li>50% Grenache, 25% Syrah, 25% Cinsault<\/li>\n<li>Isabelle Mangeart et Christian Marbler<\/li>\n<\/ul>\n<p>S\u00fcdfrankreich pur.
