Siedfleisch und Metzgete sind da die typisch Schweizerischen Antworten f\u00fcr Karnivoren (Fleischfresser), die auch sehr gerne \u00f6fters Vegi-Tage einlegen. In Spanien heisst das Cocido. Und In Madrid, der Geburtsstadt meiner Mutter:&nbsp;<a href=\"http:\/\/tapas.ch\/wordpress\/wp-content\/uploads\/2017\/01\/Cocido-Madrileno.pdf\" target=\"_blank\" rel=\"noopener noreferrer\">Cocido Madrile\u00f1o<\/a>. Paella und Tapas gelten vielfach als spanische Nationalspeisen, aber ein Cocido ist das, was das Volk isst.<\/p>\n<p>Mageres Rindfleisch, Speck und Chorizo. Zwei Stunden gekocht. Suppenknochen dazu mit glibbrigem, fettigem Knochenmark sind f\u00fcr mich das geilste. Riscal war bei unserer Weinreise 2015 das best vermarktete Weingut in Rioja. Geb\u00e4ude und Hotel vom Stararchitekten&nbsp;Frank O. Gehry (u.a. Guggenheim Museum Bilbao), Asiatische Reisegruppen, professionelle Pr\u00e4sentation. Nicht, dass ich das das Non-plus-ultra finde, ganz im Gegenteil. Aber ich habe Respekt vor so viel Professionalit\u00e4t. Der Wein ist sehr gut. Aber nicht hervorragend. Das letztere schaffen wohl nur die (kleineren) Aficionados.<\/p>\n<p>Aber f\u00fcr einen kalten Winterabend war es die Erf\u00fcllung aller kulinarischen und \u00f6nologischen Tr\u00e4ume.
