Mindestens die Marketing-Abteilungen lassen uns das glauben. Als Hilfs-J\u00e4ger (=Treiber) kann ich aber best\u00e4tigen, dass die eigentlichen Jagden in unseren Breitengraden tats\u00e4chlich im Herbst und Winter stattfinden. Am n\u00e4chsten Samstag bin ich wieder bei der Jagd im Raum W\u00fclflingen-Pfungen-Embrach eingeladen. Kein Zuckerschlecken, sondern eine k\u00f6rperliche H\u00f6chstleistung im sehr steilen Gel\u00e4nde, aber ein Naturerlebnis erster G\u00fcte. Einen &#8222;richtigen&#8220;, am Knochen. Es heisst, die am Knochen seien von jungen, zarten Rehen und die ausgel\u00f6sten ohne Knochen von grossen, weniger zarten. Jedenfalls ist die Zubereitung aufw\u00e4ndig. Die sogenannte Silberhaut muss m\u00f6glichst schonend mit einem sehr scharfen Messer entfernt werden. Danach brate ich das grosse St\u00fcck rundum kurz an und schiebe es dann f\u00fcr min. 2 Stunden in den Niedergar-Ofen bei 80\u00b0C. Wenn im Kern 55\u00b0C erreicht sind, ist das Fleisch perfekt rosarot. Jetzt werden die beiden St\u00fccke mit dem Messer vom Knochen losgel\u00f6st. Auf jeder Seite des R\u00fcckens ein langes Rehfilet. Und darunter noch die beiden kleinen falschen Filets. Dazu gibt&#8217;s die typischen Wild-Beilagen wie Sp\u00e4tzli, Rosenkohl, Rotkraut, Kastanien, Birnen, Preiselbeeren. Da kann man sich gut und gerne 3 Stunden in der K\u00fcche verweilen. Ein lokaler Pinot Noir. Das <a href=\"http:\/\/www.bachtobel.ch\/\" target=\"_blank\" rel=\"noopener noreferrer\">Weingut Bachtobel<\/a> vom Ottoberg in Weinfelden ist in Weinkreisen ein Hype. Ich habe den Nr. 1, Nr. 2 und Nr. 3. Der verk\u00f6stigte Nr. 1 ist der einfachste. Ein typischer Vertreter der neuen Schweizer Pinot Noir Welt. Komplett anders als noch vor 10 oder 20 Jahren. Nicht mehr die reine Fruchtigkeit und nat\u00fcrlich keineswegs saurer Most, sondern zart, fein und extrem &#8222;sauber&#8220;. Kein Blender.
