Aus Peru. Dem kulinarischen Trendland zurzeit schlechthin.&nbsp;Ceviche ist roher Fisch. Gebeizt in Limettensaft. B\u00f6se Zungen sagen, es sei das Sushi des 21. Jahrhunderts, weil in Manhattan die Ceviche Restaurants offenbar&nbsp;bereits&nbsp;die Sushi-Bars abl\u00f6sen.<\/p>\n<p>Wie meistens, wenn ich mich an Neues heran wage, st\u00f6bere ich stundenlang im Internet. 95% ist Schrott. Und von den restlichen 5% versuche ich mein Rezept zusammenzustellen. Meine Tapas habe ich fast alle vor Ort in Spanien schon genossen. In Peru war ich leider noch nie. Aber als versierter Kulinariker sp\u00fcrt man schnell, was stimmig ist. Mein erstes Ceviche wurde jedenfalls von meinem einheimischen, extrem kritischen Publikum (= Familie) auf fast unglaubliche Weise akzeptiert.<\/p>\n<p>&nbsp;<\/p>\n<figure id=\"attachment_3161\" aria-describedby=\"caption-attachment-3161\" style=\"width: 900px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-3161 size-large\" src=\"http:\/\/tapas.ch\/wordpress\/wp-content\/uploads\/2016\/05\/Ceviche-1024x815.jpg\" alt=\"Ceviche\" width=\"900\" height=\"716\" srcset=\"https:\/\/tapas.ch\/wordpress\/wp-content\/uploads\/2016\/05\/Ceviche-1024x815.jpg 1024w, https:\/\/tapas.ch\/wordpress\/wp-content\/uploads\/2016\/05\/Ceviche-300x239.jpg 300w, https:\/\/tapas.ch\/wordpress\/wp-content\/uploads\/2016\/05\/Ceviche-768x611.jpg 768w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><figcaption id=\"caption-attachment-3161\" class=\"wp-caption-text\">Ceviche<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>F\u00fcr mich ist die Frage, welcher Wein dazu passt, nat\u00fcrlich fast so wichtig wie das Gelingen des Rezeptes. Ich nahm an, dass das Ceviche sauer schmecken&nbsp;werde, marinierte ich die Kabeljau-W\u00fcrfel doch in \u00fcber 1dl beissend saurem Limettensaft. Dank der &#8222;leche de tigre&#8220; (Tigermilch) &#8211; schlicht und einfach Kochrahm mit&nbsp;Gew\u00fcrzen &#8211; wird die kalte Speise aber erstaunlich gem\u00e4ssigt. Trotzdem tippte ich auf einen leicht s\u00fcsslichen, nat\u00fcrlich weissen Wein. Riesling: ein Reizwort in meinem \u00f6nologischen Leben. Gem\u00e4ss&nbsp;der &#8222;Nachkriegs-Rhetorik&#8220; meines Vaters war ein deutscher Wein gleichzusetzen mit Sirup und damit ein No-Go f\u00fcr ein zivilisiertes, humanistisches Wesen. Tempora mutantur &#8211; die Zeiten \u00e4ndern sich. In meinem WSET Kurs lernte ich, dass der deutsche Riesling die K\u00f6nigin der Weissweine ist. Das ist objektiv. Ich bin aber subjektiv. Deshalb hatte ich zur Zeit nur genau eine Flasche deutschen Riesling neben hunderten geliebten roten Tanninbomben im Keller. Teuer wie eine K\u00f6nigin und von der Mosel, wo sie fast alle mehr oder weniger s\u00fcss sind.
