Lorbeerbl\u00e4tter und Salz beigeben und leicht zum k\u00f6cheln bringen.<\/li>\n<li>Parallel dazu einen passenden Sofrito herstellen:\n<ul>\n<li>In einer Bratpfanne mit Oliven\u00f6l Zwiebeln und Knoblauch glasig d\u00fcnsten. Mit Paprikapulver w\u00fcrzen.<\/li>\n<li>Chorizo Scheiben beigeben und wenige Minuten mitbraten. Das Mehl unterr\u00fchren.<\/li>\n<li>Die gehackten Tomaten beigeben und etwas vom Kuttelwasser zur Verd\u00fcnnung. Mit Muskat und Chili w\u00fcrzen und einige Minuten k\u00f6cheln.<\/li>\n<\/ul>\n<\/li>\n<li>Am Schluss den Sofrito zu den Kutteln geben (oder umgekehrt). Gut r\u00fchren und ggf. mit Salz und Pfeffer abschmecken.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Tipp<\/strong><\/p>\n<ul>\n<li>Wenn man rohe Kutteln nimmt, m\u00fcsste man die stundenlang kochen. Deshalb besser beim Metzger nach vor- oder ganzgekochten fragen. Zum Teil kriegt man die auch abgepackt im Supermarkt.<\/li>\n<li>Optional f\u00fcr hungrige M\u00e4uler: Blutwurst, Schinkenw\u00fcrfel.<\/li>\n<li>Am besten schmecken die Callos aufgew\u00e4rmt am zweiten Tag.<\/li>\n<li>Mac\u00e1n ist ein Gemeinschaftswerk der&nbsp;beiden Weingiganten Vega Sicilia (E) und Benjamin Rothschild (F).
