{"id":2907,"date":"2016-03-06T14:38:08","date_gmt":"2016-03-06T13:38:08","guid":{"rendered":"http:\/\/tapas.ch\/wordpress\/?p=2907"},"modified":"2023-02-05T20:53:32","modified_gmt":"2023-02-05T19:53:32","slug":"callos-madrilenos","status":"publish","type":"post","link":"https:\/\/tapas.ch\/wordpress\/callos-madrilenos\/","title":{"rendered":"Callos madrile\u00f1os"},"content":{"rendered":"<p>(Madrider Kutteln)<\/p>\n<p><strong>Zutaten<\/strong><\/p>\n<ul>\n<li>400g vorgekochte oder ganz gekochte Kutteln<\/li>\n<li>1 Zwiebel<\/li>\n<li>1 Knoblauchzehe<\/li>\n<li>400g gehackte Tomaten (B\u00fcchse)<\/li>\n<li>2 Essl\u00f6ffel Weissmehl<\/li>\n<li>150\u2026200g Chorizo Wurst<\/li>\n<li>Paprikapulver<\/li>\n<li>wenige Lorbeerbl\u00e4tter<\/li>\n<li>etwas zerstossener Chili<\/li>\n<li>1 Essl\u00f6ffel geriebene Muskatnuss<\/li>\n<li>Salz<\/li>\n<li>Pfeffer<\/li>\n<li>Oliven\u00f6l<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Vorbereitung<\/strong><\/p>\n<ul>\n<li>Die Kutteln ggf. noch in Streifen schneiden.<\/li>\n<li>Zwiebel und Knoblauch klein schneiden.<\/li>\n<li>Die Chorizo Wurst pellen und in ca. 1cm dicke Scheiben schneiden.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Zubereitung<\/strong><\/p>\n<ul>\n<li>Die Kutteln in einen Kochtopf geben und knapp mit Wasser bedecken. Lorbeerbl\u00e4tter und Salz beigeben und leicht zum k\u00f6cheln bringen.<\/li>\n<li>Parallel dazu einen passenden Sofrito herstellen:\n<ul>\n<li>In einer Bratpfanne mit Oliven\u00f6l Zwiebeln und Knoblauch glasig d\u00fcnsten. Mit Paprikapulver w\u00fcrzen.<\/li>\n<li>Chorizo Scheiben beigeben und wenige Minuten mitbraten. Das Mehl unterr\u00fchren.<\/li>\n<li>Die gehackten Tomaten beigeben und etwas vom Kuttelwasser zur Verd\u00fcnnung. Mit Muskat und Chili w\u00fcrzen und einige Minuten k\u00f6cheln.<\/li>\n<\/ul>\n<\/li>\n<li>Am Schluss den Sofrito zu den Kutteln geben (oder umgekehrt). Gut r\u00fchren und ggf. mit Salz und Pfeffer abschmecken.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Tipp<\/strong><\/p>\n<ul>\n<li>Wenn man rohe Kutteln nimmt, m\u00fcsste man die stundenlang kochen. Deshalb besser beim Metzger nach vor- oder ganzgekochten fragen. Zum Teil kriegt man die auch abgepackt im Supermarkt.<\/li>\n<li>Optional f\u00fcr hungrige M\u00e4uler: Blutwurst, Schinkenw\u00fcrfel.<\/li>\n<li>Am besten schmecken die Callos aufgew\u00e4rmt am zweiten Tag.<\/li>\n<li>Mac\u00e1n ist ein Gemeinschaftswerk der&nbsp;beiden Weingiganten Vega Sicilia (E) und Benjamin Rothschild (F).
