
{"id":211,"date":"2014-12-21T14:30:17","date_gmt":"2014-12-21T13:30:17","guid":{"rendered":"http:\/\/tapas.ch\/?p=211"},"modified":"2023-02-05T22:50:24","modified_gmt":"2023-02-05T21:50:24","slug":"huevos-a-la-andaluza","status":"publish","type":"post","link":"https:\/\/tapas.ch\/wordpress\/huevos-a-la-andaluza\/","title":{"rendered":"Huevos a la andaluza"},"content":{"rendered":"<p>(Eier andalusische Art)<\/p>\n<p><strong>Zutaten<\/strong><\/p>\n<ul>\n<li>ca. 150g Chorizo Wurst<\/li>\n<li>1 Zwiebel<\/li>\n<li>1 Knoblauchzehe<\/li>\n<li>1 rote und eine gr\u00fcne Peperoni<\/li>\n<li>2 Tomaten<\/li>\n<li>4 Eier<\/li>\n<li>Piment d\u2019Espelette (getrocknetes baskisches Chili-Pulver)<\/li>\n<li>Salz<\/li>\n<li>Pfeffer<\/li>\n<li>Oliven\u00f6l<\/li>\n<li>1 Schuss Wein<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Vorbereitung<\/strong><\/p>\n<ul>\n<li>Zwiebel und Knoblauchzehe klein hacken.<\/li>\n<li>Peperonis in d\u00fcnne Streifen schneiden.<\/li>\n<li>Den Stielansatz der Tomaten herausschneiden und dann die Tomaten in kleine W\u00fcrfel schneiden.<\/li>\n<li>Chorizo pellen und in ca. 5mm dicke Scheiben schneiden (3&#8230;4 Scheiben pro Person je nach Gr\u00f6sse des Schmort\u00f6pfchens). Den Rest der Wurst kann man anderweitig verwenden.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Zubereitung<\/strong><\/p>\n<ul>\n<li>Im Oliven\u00f6l in der Bratpfanne die Chorizo-Scheiben beidseitig etwas anbraten und wegstellen.<\/li>\n<li>In der selben Pfanne Zwiebel und Knoblauch and\u00fcnsten und dann die Peperonistreifen ca. 5 Minuten mitd\u00fcnsten.<\/li>\n<li>Die Tomatenw\u00fcrfel beigeben, salzen und pfeffern und k\u00f6cheln bis sie zerfallen. Einen Schuss Wein beigeben.<\/li>\n<li>Dann diese F\u00fcllung in kleine Schmort\u00f6pfchen mit ca. 10cm Durchmesser verteilen und die Chorizo-Scheiben darauf legen. In der Mitte eine kleine Vertiefung machen, damit sp\u00e4ter das Eigelb sch\u00f6n im Zentrum bleibt.<\/li>\n<li>In jedes T\u00f6pfchen ein Ei aufschlagen, so dass das Eigelb wie bei einem Spiegelei ganz bleibt (zuerst das Eiweiss reingiessen und am Schluss das Eigelb in die Mitte legen).<\/li>\n<li>Im 200\u00b0C vorgeheizten Ofen eine Auflaufform mit kochendem Wasser f\u00fcllen und die T\u00f6pfchen ins Wasser legen.
