
{"id":199,"date":"2014-12-21T14:21:20","date_gmt":"2014-12-21T13:21:20","guid":{"rendered":"http:\/\/tapas.ch\/?p=199"},"modified":"2023-02-05T22:50:41","modified_gmt":"2023-02-05T21:50:41","slug":"costillas-adobadas-en-miel-im-honig-marinierte-spare-ribs","status":"publish","type":"post","link":"https:\/\/tapas.ch\/wordpress\/costillas-adobadas-en-miel-im-honig-marinierte-spare-ribs\/","title":{"rendered":"Costillas adobadas en miel"},"content":{"rendered":"<p>(im Honig marinierte Spare Ribs)<\/p>\n<p><strong>Zutaten<\/strong><\/p>\n<ul>\n<li>800g Brustspitz (Spare Ribs)<\/li>\n<li>70g fl\u00fcssiger Honig<\/li>\n<li>1 Knoblauchzehe<\/li>\n<li>einige Spritzer Zitronensaft<\/li>\n<li>1 Schuss Sherry<\/li>\n<li>Oliven\u00f6l<\/li>\n<li>Mediterrane Gew\u00fcrze (Thymian, Oregano, Rosmarin), frisch gehackt oder getrocknet<\/li>\n<li>Weissmehl<\/li>\n<li>Salz (Fleur de Sel)<\/li>\n<li>Pfeffer<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Vorbereitung<\/strong><strong>&nbsp;<\/strong><\/p>\n<ul>\n<li>Die Spare Ribs mit einem Fleischmesser oder Beil in h\u00e4ppchen-gerechte St\u00fccke schneiden.<\/li>\n<li>Etwas Mehl in einen Plastik-Beutel geben und die Costilla-St\u00fccke darin gut sch\u00fctteln, so dass sie sch\u00f6n mit Mehl eingerieben sind.<\/li>\n<li>In einer Sch\u00fcssel die Marinade herstellen aus:\n<ul>\n<li>70g fl\u00fcssiger Honig<\/li>\n<li>gepresste Knoblauchzehe<\/li>\n<li>einige Spritzer Zitronensaft und je ein Schuss Oliven\u00f6l und Sherry<\/li>\n<li>mediterrane Gew\u00fcrze<\/li>\n<li>Pfeffer und Salz<\/li>\n<\/ul>\n<\/li>\n<li>Ggf. die Sch\u00fcssel in ein heisses Wasserbad legen, damit der Honig ganz fl\u00fcssig wird.<\/li>\n<li>Die mit Mehl eingepuderten Costillas in der Sch\u00fcssel mit der Marinade von Hand gut vermischen.<\/li>\n<li>In einen Teller geben und mit Folie bedecken. Einen Tag im K\u00fchlschrank marinieren lassen.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Zubereitung<\/strong><strong>&nbsp;<\/strong><\/p>\n<ul>\n<li>Den Backofen auf 180\u00b0C vorheizen. Die Costillas etwas abtropfen und auf ein mit viel Backpapier ausgelegtes Backblech legen.<\/li>\n<li>Dann ca. 1 Stunde backen, bis sie an den Spitzen braun sind. In der H\u00e4lfte die St\u00fccke mit einer Gabel wenden.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Tipp<\/strong><strong>&nbsp;<\/strong><\/p>\n<ul>\n<li>Alternativ kann man die Costillas gut auch auf dem geschlossenen Gasgrill in einer gelochten Aluschale braten.
