{"id":174,"date":"2014-12-29T14:16:29","date_gmt":"2014-12-29T13:16:29","guid":{"rendered":"http:\/\/tapas.ch\/?p=174"},"modified":"2023-02-05T22:42:24","modified_gmt":"2023-02-05T21:42:24","slug":"croquetas-de-jamon-serrano","status":"publish","type":"post","link":"https:\/\/tapas.ch\/wordpress\/croquetas-de-jamon-serrano\/","title":{"rendered":"Croquetas de jam\u00f3n serrano"},"content":{"rendered":"<p>(Schinken-Kroketten)<\/p>\n<p><strong>Zutaten<\/strong><\/p>\n<ul>\n<li>40g Butter<\/li>\n<li>\u00bd Zwiebel<\/li>\n<li>125g Weissmehl<\/li>\n<li>1&#8230;2dl Milch<\/li>\n<li>2 Eier<\/li>\n<li>50g spanischer Serrano-Schinken<\/li>\n<li>Paniermehl<\/li>\n<li>Oliven\u00f6l<\/li>\n<li>Pfeffer<\/li>\n<li>Salz<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>&nbsp;<\/strong><strong>Vorbereitung<\/strong><strong>&nbsp;<\/strong><\/p>\n<ul>\n<li>Die halbe Zwiebel und den Schinken klein schneiden.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Zubereitung<\/strong><strong>&nbsp;<\/strong><\/p>\n<ul>\n<li>Butter in einer kleinen Pfanne m\u00e4ssig erhitzen und das Mehl darin mit einem Suppenl\u00f6ffel ca. 3 Minuten unterr\u00fchren. Grosse Kr\u00fcmel zerr\u00fccken. Es entsteht eine feinkr\u00fcmelige Mischung.<\/li>\n<li>Die Milch langsam mit dem Schneebesen unterr\u00fchren. Es entsteht ein Teig. Ziemlich lange kr\u00e4ftig r\u00fchren, bis keine Mehlklumpen mehr vorhanden sind. Die Milchmenge so tarieren, dass der Teig ziemlich dick wird, damit man ihn sp\u00e4ter gut zu Kroketten formen kann.<\/li>\n<li>Die Zwiebeln und den Schinken im Oliven\u00f6l in der Bratpfanne langsam glasig anbraten. Pfeffern und salzen und dann zum Teig geben und gut verr\u00fchren.<\/li>\n<li>Den Teig in einen mit Oliven\u00f6l eingefetteten Suppenteller geben. Mit Frischhaltefolie bedecken und min. 3 Stunden in den K\u00fchlschrank stellen (ggf. eine ganze Nacht).<\/li>\n<li>Anschliessend die 2 Eier verr\u00fchren und gen\u00fcgend Paniermehl bereitstellen. Aus dem Teig von Hand ca. 8 kleine Kroketten formen, nacheinander im Ei und Paniermehl wenden und dann in der Bratpfanne im Oliven\u00f6l allseitig goldbraun braten. Nicht zu heiss und daf\u00fcr l\u00e4nger braten, damit der Teig innen ganz gar wird (total ca. 10 Minuten). Danach noch ca. 15 Minuten in den 200\u00b0C heissen Ofen.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Tipp<\/strong><strong>&nbsp;<\/strong><\/p>\n<ul>\n<li>Das Spezielle: Die Kroketten sind aussen sch\u00f6n knusprig und innen bleiben sie weich und feucht.<\/li>\n<li>Croquetas serviert man warm.<\/li>\n<li>Muga Reserva: ein moderner Super-Rioja.
