Noilly Prat gilt als aromatischer als andere Wermutweine; es wird somit nur eine geringe Menge, zum Beispiel zum Aromatisieren, ben\u00f6tigt. Das Unternehmen und der Werksverkauf sind im s\u00fcdfranz\u00f6sischen Ort&nbsp;Marseillan&nbsp;beheimatet.<\/em><\/p>\n\n\n\n<p>Bei Fischrezepten ist mir die Noilly Prat Sauce schon \u00f6fter begegnet, weshalb ich mich der Sache nun mal annehmen wollte. Ist eine simple Fond-Sauce, der man etwas von diesem Wermut beigibt. Schmeckt aber wirklich gut zu frischem Fisch. Diesmal waren es Bio Forellen auf dem Gasgrill mit Ofenkartoffeln und gr\u00fcnem Salat. Der Weissein dazu: Flor de Vetus Verdejo, Rueda, Spanien.<\/p>\n\n\n\n<p><strong><u>Noilly Prat Sauce<\/u><\/strong><\/p>\n\n\n\n<p>zu Fisch<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>3dl Fischfond (oder Gem\u00fcsebouillon)<\/li>\n\n\n\n<li>\u00bddl Noilly Prat Wermut (s\u00fcdfranz\u00f6sischer, aufgespriteter Weisswein mit Kr\u00e4utern gew\u00fcrzt)<\/li>\n\n\n\n<li>\u00bd Zwiebel<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>2dl Halbrahm (Rama)<\/li>\n\n\n\n<li>ein Schuss Weisswein<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>Maizena Express (Mais-St\u00e4rke Pulver)<\/li>\n\n\n\n<li>ein paar kleine St\u00fccke feste Butter<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Zwiebel r\u00fcsten und sehr klein schneiden<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Die Zwiebeln in einem Topf in etwas \u00d6l ca. 5 Minuten anschwitzen.<\/li>\n\n\n\n<li>Einen Schuss Weisswein zugeben und auch ca. 5 Minuten einkochen lassen.<\/li>\n\n\n\n<li>Fond und Rahm beigeben, aufkochen und ziemlich lange (bis zu 30 Minuten) auf 2\/3 eink\u00f6cheln lassen (ohne Deckel).<\/li>\n\n\n\n<li>Gegen Schluss mit dem Schwingbesen etwas Maizena Express einr\u00fchren, um die s\u00e4mige Konsistenz einstellen (ca. 5 Essl\u00f6ffel).<\/li>\n\n\n\n<li>Vom Herd nehmen, den Noilly Prat zugeben und mit Salz und Pfeffer abschmecken.<\/li>\n\n\n\n<li>Vor dem Servieren in ein hohes, schmales Gef\u00e4ss geben und mit dem Stabmixer die Butterst\u00fccke unterschlagen, damit die Sauce sch\u00f6n schaumig wird und um die Zwiebeln zu p\u00fcrieren.<\/li>\n\n\n\n<li>In eine heisse Schale leeren zum Servieren.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Solche Saucen brauchen Zeit.
