Dieses Mahl inkl. Wein war etwas vom tollsten, das ich je kochte! Sorry f\u00fcr dieses Eigenlob. Die Inspiration kam wie \u00f6fters aus einem Artikel der NZZ (Neue Z\u00fcrcher Zeitung). Meeresfr\u00fcchte (mar) und Fleisch aus den Bergen (muntanya). Dazu Sofrito und Picada, die katalanischen Wunderw\u00fcrzen. Und der Nunci Costero, einer der geilsten  Weine des Priorat. 15-j\u00e4hrig.<\/p>\n\n\n\n<p><strong><u>Mar i muntanya<\/u><\/strong><\/p>\n\n\n\n<p>Katalonien (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>4 Tomaten<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>2 Knoblauchzehen<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>1 Prise Zucker<\/li>\n\n\n\n<li>1 Teel\u00f6ffel Piment\u00f3n de la Vera (ger\u00e4uchertes Paprikapulver)<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>Chilipulver\/Flocken<\/li>\n\n\n\n<li>ein paar Safranf\u00e4den<\/li>\n\n\n\n<li>30g Mandelsplitter<\/li>\n\n\n\n<li>30g altes Brot<\/li>\n\n\n\n<li>eine Hand voll frische Petersilie<\/li>\n\n\n\n<li>1 Schuss Sherry<\/li>\n\n\n\n<li>\u00bd Teel\u00f6ffel Zimtpulver<\/li>\n\n\n\n<li>wenig Weissmehl<\/li>\n\n\n\n<li>ein paar getrocknete Lorbeerbl\u00e4tter<\/li>\n\n\n\n<li>etwas Rotwein<\/li>\n\n\n\n<li>etwas Weisswein<\/li>\n\n\n\n<li>1 W\u00fcrfel Gem\u00fcsebouillon aufgel\u00f6st in heissem Wasser<\/li>\n\n\n\n<li>300g Schweinehals<\/li>\n\n\n\n<li>400g Sepia oder kleine Kalamare<\/li>\n\n\n\n<li>ca. 8 Langustinos (aus &#8222;Showgr\u00fcnden&#8220; am besten noch komplett mit Schale)<\/li>\n\n\n\n<li>250g Venusmuscheln (Vongole)<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Zuerst den Sofrito (katal. Sofregit) herstellen:\n<ul class=\"wp-block-list\">\n<li>Bei den frischen Tomaten den Stielansatz herausschneiden und sie dann kurz im Wasser br\u00fchen, abk\u00fchlen und h\u00e4uten. In St\u00fccke schneiden.<\/li>\n\n\n\n<li>Zwiebel und Knoblauch r\u00fcsten und klein hacken und dann im Oliven\u00f6l in der Bratpfanne and\u00fcnsten. Am Schluss Piment\u00f3n de la Vera unterr\u00fchren f\u00fcr den rauchigen Geschmack.<\/li>\n\n\n\n<li>Die Tomaten dazugeben.<\/li>\n\n\n\n<li>Mit Salz, Pfeffer und Zucker w\u00fcrzen. Nach Wunsch auch mit etwas Chili.<\/li>\n\n\n\n<li>So lange k\u00f6cheln bis es ziemlich eingedickt ist. Ca. 25 Minuten. Dazwischen etwas Rotwein zugeben.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Die Picada (katal. W\u00fcrzpaste) herstellen:\n<ul class=\"wp-block-list\">\n<li>Knoblauch klein hacken<\/li>\n\n\n\n<li>Petersilie klein schneiden<\/li>\n\n\n\n<li>Brot entrinden, in W\u00fcrfel schneiden und in der Bratpfanne ohne \u00d6l oder im 200\u00b0C Ofen leicht braun r\u00f6sten.<\/li>\n\n\n\n<li>Die Mandelsplitter ebenfalls leicht r\u00f6sten.<\/li>\n\n\n\n<li>Safran, Zimt, Knoblauch, Mandeln, Brot, Petersilie, Salz und Pfeffer in einem M\u00f6rser gut zerstampfen. Wenig Oliven\u00f6l untermischen.<\/li>\n\n\n\n<li>Einen Schuss Sherry zugeben und dann so viel Weisswein, bis eine eher feste Paste entsteht. Sie soll nicht zu fl\u00fcssig sein.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Fleisch und Meeresfr\u00fcchte:\n<ul class=\"wp-block-list\">\n<li>Den Schweinehals ggf. noch in ca. 3cm W\u00fcrfel schneiden und mit etwas Mehl best\u00e4uben.<\/li>\n\n\n\n<li>Sepias, Langustinos und Muscheln ggf. auftauen und waschen. Sepia mit Haushaltpapier sehr gut trocknen.<\/li>\n\n\n\n<li>Eine Zwiebel r\u00fcsten und in Schnitze schneiden.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>In einem flachen Gusseisenbr\u00e4ter (z.B. Le Creuset Profitopf) mit reichlich Oliven\u00f6l hintereinander die Fleischst\u00fccke, Sepias und Langustinos kurz scharf anbraten und beiseitelegen.<\/li>\n\n\n\n<li>Ebenso die Muscheln kurz braten und beiseitelegen, damit sie sich \u00f6ffnen.<\/li>\n\n\n\n<li>Den Sofrito in den leeren Br\u00e4ter geben.<\/li>\n\n\n\n<li>Das Fleisch und die Meeresfr\u00fcchte (ohne Langustinos) beigeben.<\/li>\n\n\n\n<li>Mit Gem\u00fcsebouillon auff\u00fcllen, so dass alles knapp bedeckt ist. Lorbeerbl\u00e4tter zugeben.<\/li>\n\n\n\n<li>Im geschlossenen Br\u00e4ter ca. 30 Minuten schmoren.<\/li>\n\n\n\n<li>Ca. 10 Minuten vor Schluss die vorbereitete Picada sch\u00f6n verteilen und die Langostinos oben auflegen.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>z.B. mit im Ofen gebratenen Kartoffeln servieren. Ca. 700g.<\/li>\n\n\n\n<li>Oft auch mit Huhn oder Schweinsw\u00fcrsten.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div style=\"height:39px\" aria-hidden=\"true\"
