Preisg\u00fcnstig, w\u00e4rmend und nahrhaft, aber trotzdem nicht zu mastig. Ist ja eine Suppe. Als mittlerweile halber Engadiner muss es nat\u00fcrlich die B\u00fcndner Gerstensuppe sein. Im Engadin, das ans italienische Veltlin-Tal (ital. Valtellina) grenzt, trinke ich ausw\u00e4rts nur schon aus Kostengr\u00fcnden eher einen Veltliner Wein. Der ist aus Nebbiolo Trauben, die im Piemont von den weltweit besten Weinen ergeben (Barolo und Barbaresco). Der italienische Veltliner hat \u00fcbrigens keinerlei Verwandtschaft mit den \u00f6sterreichischen gr\u00fcnen oder roten Veltlinern. Die weltweiten Trauben- und Reben-Bezeichnungen sind in der Tat etwas vom verwirrendsten, was es gibt.<\/p>\n\n\n\n<p>Aber eben: zu Hause muss es dann schon der exklusive Wein sein: Wegelin, Malsanser Blauburgunder. Weiteres siehe am Schluss.<\/p>\n\n\n\n<p><strong><u>B\u00fcndner Gerstensuppe<\/u><\/strong><\/p>\n\n\n\n<p>Schweiz (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>120g Rollgerste<\/li>\n\n\n\n<li>2\u20263 Karotten (ja nach Gr\u00f6sse)<\/li>\n\n\n\n<li>1 Lauch<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>1 Essl\u00f6ffel Butter<\/li>\n\n\n\n<li>2l Wasser<\/li>\n\n\n\n<li>2 W\u00fcrfel Gem\u00fcsebouillon<\/li>\n\n\n\n<li>1 Salsiz (ca. 100g)<\/li>\n\n\n\n<li>1.5dl Kochrahm (Rama)<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>eine Hand voll Gew\u00fcrznelken<\/li>\n\n\n\n<li>gr\u00fcne Gartenkr\u00e4uter<\/li>\n\n\n\n<li>eine Hand voll getrocknete Lorbeerbl\u00e4tter<\/li>\n\n\n\n<li>1 Prise Muskatnusspulver<\/li>\n\n\n\n<li>frischer Schnittlauch<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Karotten, Lauch und \u00bd Zwiebel sehr klein schneiden.<\/li>\n\n\n\n<li>Die andere Zwiebelh\u00e4lfte mit Nelken bestecken.<\/li>\n\n\n\n<li>Den Salsiz pellen und in kleine W\u00fcrfel schneiden.<\/li>\n\n\n\n<li>Schnittlauch klein schneiden.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>In einem grossen Topf die Butter erhitzen, die Gerste beigeben und etwas and\u00fcnsten.<\/li>\n\n\n\n<li>Alles kleingeschnittene Gem\u00fcse inkl. der halben Zwiebel unter st\u00e4ndigem R\u00fchren ca. 5 Minuten mitd\u00fcnsten.<\/li>\n\n\n\n<li>2l Wasser und Bouillonw\u00fcrfel beigeben und aufkochen.<\/li>\n\n\n\n<li>Die Lorbeerbl\u00e4tter und die besteckte Zwiebel beigeben und ca. 40 Minuten zugedeckt k\u00f6cheln. Dann beides wieder entfernen.<\/li>\n\n\n\n<li>Den Salsiz beigeben und noch 10 Minuten mitk\u00f6cheln.<\/li>\n\n\n\n<li>W\u00fcrzen mit Pfeffer, Muskatnuss und den Kr\u00e4utern.<\/li>\n\n\n\n<li>Kochrahm unterr\u00fchren zum Verfeinern.<\/li>\n\n\n\n<li>Ggf. in eine vorgew\u00e4rmte Suppensch\u00fcssel leeren und mit Schnittlauch garnieren.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Heiss servieren mit frischem Brot und einem B\u00fcndner Rotwein.<\/li>\n\n\n\n<li>Option, wenn man es mag: eine Handvoll kleingeschnittenen Knollensellerie H\u00e4tte gerne noch eine Flasche ge\u00f6ffnet \ud83d\ude42 Er ist ein Leichtathlet: Stark aber drahtig. Wenn man &#8211; wie ich &#8211; h\u00e4ufig fettere Weine aus Spanien &amp; Co. trinkt, ist er eine Erleuchtung.
