Zufall! Spaghetti Vongole ist bekannt und ich mag das sehr. Cozze, also Mejillones oder Miesmuscheln pr\u00e4sentieren physisch und geschmacklich aber schon etwas mehr. Mag ich genau so. Die mittelgrossen Exemplare schmecken am besten.<\/p>\n\n\n\n<p><strong><u>Spaghetti con le cozze<\/u><\/strong><\/p>\n\n\n\n<p>Italien (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>min. 1kg Miesmuscheln, besser kleinere<\/li>\n\n\n\n<li>600g Spaghetti<\/li>\n\n\n\n<li>ca. 200g Stangensellerie<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>1\u20262 Knoblauchzehen<\/li>\n\n\n\n<li>2 Peperoncini<\/li>\n\n\n\n<li>50g eingelegte Sardellenfilets aus der B\u00fcchse<\/li>\n\n\n\n<li>400g gehackte B\u00fcchsentomaten<\/li>\n\n\n\n<li>2dl Weisswein<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>1 Prise Zucker<\/li>\n\n\n\n<li>edels\u00fcsses Paprikapulver<\/li>\n\n\n\n<li>frische Petersilie<\/li>\n\n\n\n<li>ggf. andere frische Kr\u00e4uter<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Die Muscheln unter fliessendem Wasser waschen und ggf. abkratzen. Stark ge\u00f6ffnete Exemplare wegwerfen.<\/li>\n\n\n\n<li>Zwiebel, Knoblauch und Sellerie klein schneiden<\/li>\n\n\n\n<li>Peperonicinis klein schneiden und je nach Sch\u00e4rfewunsch Kerne entfernen.<\/li>\n\n\n\n<li>Die Sardellenfilets vom \u00d6l abtropfen und klein schneiden.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>In einem hohen Topf Oliven\u00f6l stark erhitzen und die Muscheln zugeben. Es spritzt! D\u00fcnsten bis die Muscheln offen sind (wenige Minuten).<\/li>\n\n\n\n<li>Den Weisswein dazugeben, damit sie den Weingeschmack annehmen. Ca. 5 Minuten im Dampf k\u00f6cheln. Vorsichtig umr\u00fchren.<\/li>\n\n\n\n<li>Den Weinsud mit einem Sieb oder Lochschale in eine Schale abseihen und beiseite stellen.<\/li>\n\n\n\n<li>Von gut der H\u00e4lfte der abgetropften Muscheln das Fleisch aus der Schale nehmen und die Schalen wegwerfen. Bei der anderen (sch\u00f6neren) H\u00e4lfte das Fleisch drinnen lassen. Dadurch hat man am Schluss nicht zu viel Muschelschalen zum servieren! Muscheln beiseite stellen.<\/li>\n\n\n\n<li>Neu im selben Topf mit Oliven\u00f6l Zwiebeln, Knoblauch, Sellerie und Peperoncini ca. 5 Minuten and\u00fcnsten. Mit edels\u00fcssem Paprika w\u00fcrzen.<\/li>\n\n\n\n<li>Den Weinsud dazu geben und dann die Tomaten und Sardellen. Ca. 5 Minuten k\u00f6cheln und mit frischen Kr\u00e4utern, Zucker, Salz und Pfeffer w\u00fcrzen. Am Schluss die Muscheln sorgf\u00e4ltig unter die Sauce r\u00fchren.<\/li>\n\n\n\n<li>Parallel dazu die Spaghetti al denke kochen, abgiessen, mit der Muschelsauce mischen und in einer grossen Spaghettischale servieren. Petersilie dar\u00fcber streuen.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Grosse Schale auf den Tisch stellen f\u00fcr die Muschelschalen.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div style=\"height:46px\"
