Die Geschichte und das Rezept dieses bekannten italienischen Arme-Leute-Essens. Ich kannte das bisher nicht und der Artikel machte mich so gluschtig, dass das zwei Tage sp\u00e4ter bei mir bereits auf den Tisch stand.<\/p>\n\n\n\n<p><strong><u>Pasta e fagioli<\/u><\/strong><\/p>\n\n\n\n<p>Italien (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>250g Borlotti Bohnen (gekocht aus B\u00fcchse oder trocken zum Kochen)<\/li>\n\n\n\n<li>100g Stangensellerie<\/li>\n\n\n\n<li>250g eher kleine, wenn m\u00f6glich gemischte, Teigwaren (ich habe hier Fusilli verwendet)<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>2 Knoblauchzehen<\/li>\n\n\n\n<li>400g gehackte Tomaten aus der B\u00fcchse<\/li>\n\n\n\n<li>1 Essl\u00f6ffel Tomatenmark aus der Tube<\/li>\n\n\n\n<li>getrocknetes Chilipulver, z.B. Piment d&#8217;Espelette<\/li>\n\n\n\n<li><span style=\"font-size: 1.0625rem;\">Salz<\/span><\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>frische Petersilie<\/li>\n\n\n\n<li>Oliven\u00f6l<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Die B\u00fcchsenbohnen im Sieb gut auswaschen und abtropfen. Bei trockenen Bohnen, diese 12h im Wasser einweichen und dann ca. 30 Minuten weichkochen.<\/li>\n\n\n\n<li>Zwiebel und Knoblauch r\u00fcsten und klein schneiden.<\/li>\n\n\n\n<li>Den Stangensellerie in sehr kleine St\u00fccke schneiden.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>In einem gen\u00fcgend hohen Topf Zwiebel, Knoblauch und Sellerie sachte ca. 5 Minuten im Oliven\u00f6l d\u00fcnsten.<\/li>\n\n\n\n<li>Die gehackten Tomaten, das Tomatenmark, eine Prise Salz und Chili unterr\u00fchren.<\/li>\n\n\n\n<li>Die Bohnen zugeben und ca. 7 Minuten k\u00f6cheln lassen. Die Bohnen d\u00fcrfen sehr weich werden. Man kann einen Teil auch ein bisschen mit der Kelle zermantschen.<\/li>\n\n\n\n<li>Die Teigwaren zugeben, k\u00f6cheln und r\u00fchren bis sie al dente sind. Das kann gut und gerne gegen 30 Minuten dauern, da die Pasta in der Sauce und nicht im Wasser kocht. Dabei muss man etappenweise noch ziemlich viel Wasser zugeben und immer gut r\u00fchren, damit nichts anhockt. Das Gericht soll am Schluss cremig sein, also nicht zu fl\u00fcssig!<\/li>\n\n\n\n<li>Am Schluss mit Salz und Pfeffer abschmecken.<\/li>\n\n\n\n<li>Vor dem Servieren im 80\u00b0C Ofen 10 Minuten ziehen lassen. Mit Petersilie bestreuen. Auf dem Teller geriebener Parmesan dar\u00fcber streuen.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Das arme Leute Essen in Italien. Mastig, cremig. In jeder Region etwas anders.<\/li>\n\n\n\n<li>Sehr empfehlenswerte Option: Wenn man Parmesan zum Reiben am St\u00fcck kauft, bleiben immer die harten Rinden \u00fcbrig. Die kann man hier in kleine St\u00fccke schneiden, mit den Teigwaren zusammen in die Pfanne geben und mitkochen. Die Rinde wird so sch\u00f6n weich, die Sauce cremig und man muss nichts wegwerfen.<\/li>\n\n\n\n<li>Speziell ist:\n<ul class=\"wp-block-list\">\n<li>gemischte Teigwaren (Reste)<\/li>\n\n\n\n<li>Die Teigwaren kochen in der Sauce und nicht im Wasser, wie sonst \u00fcblich.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div style=\"height:31px\" aria-hidden=\"true\"
