In Frankreich sehr bodenst\u00e4ndig aber bei uns mit Enten eher unbekannt.<\/p>\n\n\n\n<p><span style=\"font-size: revert;\">Zum Cofit sagt Wikipedia: <\/span><em style=\"font-size: revert;\">Confit (von franz\u00f6sisch confire, \u201eeinlegen, einkochen\u201c) ist in Fett gekochtes und so haltbar gemachtes Fleisch. Seinen Ursprung hat das Gericht in S\u00fcdfrankreich zur Verwertung des bei der Produktion von Foie gras anfallenden Gefl\u00fcgelfleischs. Traditionell wird daf\u00fcr vor allem das Fleisch von Enten (Confit de canard), G\u00e4nsen (Confit d\u2019oie) oder Schweinen verwendet, das dann im eigenen Fett gegart wird. Meist wird das Fleisch zuvor noch leicht gep\u00f6kelt.<\/em> <\/p>\n\n\n\n<p><strong><u>Parmentier de confit de canard (Enten-Kartoffelstock Gratin)<\/u><\/strong><\/p>\n\n\n\n<p>Frankreich (f\u00fcr 4 Personen)<\/p>\n\n\n\n<p>Zutaten:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Ente:\n<ul class=\"wp-block-list\">\n<li>4\u20266 gekochte Entenschenkel eingelegt im Fett in Konservenb\u00fcchse (ca. 1.0\u20261.3kg), &#8222;Confit de Canard&#8220;<\/li>\n\n\n\n<li>60g geriebener Emmentaler-K\u00e4se<\/li>\n\n\n\n<li>1 Zwiebel<\/li>\n\n\n\n<li>1\u20262 Knoblauchzehen<\/li>\n\n\n\n<li>mediterrane Kr\u00e4uter<\/li>\n\n\n\n<li>1 Schuss Weisswein<\/li>\n\n\n\n<li>Pfeffer<\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>wenig Piment d&#8217;Espelette (Chilipulver)<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Kartoffelstock:\n<ul class=\"wp-block-list\">\n<li>1.3kg mehlig kochende Kartoffeln<\/li>\n\n\n\n<li>2dl Milch<\/li>\n\n\n\n<li>1 Schuss Kochrahm<\/li>\n\n\n\n<li>Muskatnuss gerieben<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Vorbereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Die Kartoffeln im Salzwasser zugedeckt ca. 25 Minuten weich kochen, bis ein R\u00fcstmesser nicht mehr stecken bleibt. Wasser abtropfen und die Kartoffeln abk\u00fchlen lassen.<\/li>\n\n\n\n<li>Die Entenschenkel aus der Dose nehmen. Das weisse Fett mit einem L\u00f6ffel abschaben und in eine Schale geben.<\/li>\n\n\n\n<li>Dann unter fliessendem warmem Wasser die Schenkel komplett vom Fett befreien und mit K\u00fcchenpapier trocken reiben.<\/li>\n\n\n\n<li>Die Haut und verbleibende Fettst\u00fccke von Hand und mit einem R\u00fcstmesser wegziehen. Sie wird hier nicht gebraucht.<\/li>\n\n\n\n<li>Zwiebel und Knoblauch klein schneiden.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Zubereitung:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Kartoffelstock:\n<ul class=\"wp-block-list\">\n<li>Die Kartoffeln sch\u00e4len und in St\u00fccke schneiden.<\/li>\n\n\n\n<li>In einer grossen Sch\u00fcssel mit dem Kartoffelstampfer zerstampfen.<\/li>\n\n\n\n<li>Die Milch, einen Schuss Kochrahm und danach Salz, Pfeffer und reichlich Muskatpulver mit einem L\u00f6ffel gut unter den Kartoffelstock r\u00fchren. Beiseite stellen.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Die Ente:\n<ul class=\"wp-block-list\">\n<li>Das Fleisch von Hand vom Knochen l\u00f6sen und in mundgerechte Fetzen zerkleinern (\u00e4hnlich wie beim Pulled Pork). Ggf. weitere Fettteile und Knorpel entfernen. Es bleibt am Schluss ziemlich genau die H\u00e4lfte des Netto-B\u00fcchsengewichts \u00fcbrig.<\/li>\n\n\n\n<li>In der Bratpfanne in etwas Entenfett Zwiebeln und Knoblauch and\u00fcnsten. Dann das Fleisch zugeben und ca. 10 Minuten leicht anbraten. In der H\u00e4lfte die Kr\u00e4uter beigeben und einen grossen Schuss Weisswein. Mit Salz und Pfeffer abschmecken.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Eine passende Gratinform von Hand mit etwas Entenfett einschmieren. Dann das Gericht darin geschichtet herstellen:\n<ul class=\"wp-block-list\">\n<li>zuunterst eine Lage Kartoffelstock<\/li>\n\n\n\n<li>dann das Entenfleisch<\/li>\n\n\n\n<li>und wieder Kartoffelstock<\/li>\n\n\n\n<li>zuoberst etwas Piment d&#8217;Espelette (Chilipulver) und Reibk\u00e4se<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Das Ganze im Ofen bei 200\u00b0C ca. 20 Minuten gratinieren. Gegen Schluss mit Oberhitze, damit der K\u00e4se leicht goldbraun wird.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p>Tipp:<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Der konservierte Confit de Canard ist bei uns eher schwierig zu bekommen. Ich kaufe ihn im C&amp;C Aligro.<\/li>\n\n\n\n<li>Noch sch\u00f6ner als in der Gratinform pr\u00e4sentiert er sich, wenn man ihn in Kochringen gratiniert. Dann sieht man auf dem Teller die Schichtung.<\/li>\n\n\n\n<li>Das Fleisch kann mit klein geschnittenem Gem\u00fcse oder z.B. gr\u00fcnen Erbsen erg\u00e4nzt werden.<\/li>\n\n\n\n<li>Mit Parmentier ist in Frankreich Kartoffelstock gemeint.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<p><\/p>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-2 is-cropped wp-block-gallery-1 is-layout-flex Ausgewogen, super Nase. Jetzt, nach 13 Jahren, ist genau der richtiger Zeitpunkt. Fr\u00fcher trinken w\u00e4re schade gewesen.
